  1. No, I'm not vegan. Just a vegetarian who doesn't tolerate dairy well. I love eggs and have resisted any effort from my vegan friends to convince me to give them up.
  2. Actually I eat eggs, lots of them. So egg would be a perfectly good option.
  3. Well, I tried it with sweet potatoes and they fell apart again! They just don't hold together for me like when I use Russet potatoes. I tossed grated sweet potatoes with melted earth balance butter and salt. Hmmm.....Maybe time to google to see what I did wrong.
  4. Awesome GottaSki! I might have to try it again myself to see if I can make it work with sweet potatoes.
  5. I shred up russet potatoes and toss them with olive oil and salt and them cook until brown and crispy in my waffle iron.
  6. I've tried them with sweet potatoes and somehow they don't come out the same. But russet potatoes work well!
  7. Mmmm....waffle iron hash browns for breakfast. The kids love them, I love them, I only wish that I had more potatoes on hand to shred.....
  8. Lentil soup (with kale and rainbow quinoa in it for a little variation) and hopefully either homemade bread or pull apart dinner rolls, whichever I get around to making this afternoon.
  9. By zoodles, do you mean zucchini noodles? I do have a spiralizer that makes zucchini pasta.
  10. Thanks Irish! The zucchini that I got given to me were enormous and the pancake recipe came nowhere near using them up! I will check those out. I used to work in South Florida--I did a 9 month missionary project down in the Florida Keys. While I was there I stayed on Grassy Key, about 6 miles from the town of Marathon.
  11. I'm making zucchini potato pancakes for breakfast. Yummy and especially great since we just got gifted more zucchini! http://theprudenthomemaker.com/index.php/zucchini-potato-pancakes I use Pamela's Artisan flour blend in place of the flour. Everything else in the recipe is inherently gluten free.

  13. Wow, that is some insane pricing! Are almonds just as expensive? Some people have had good luck with making their own.
  14. No, I haven't. What I will likely do is use 2 cups of my Pamela's Artisan Flour Blend with 3/4 cup of almond flour. One person wrote in the comments that they used 2 cups of all purpose G.F. flour with 3/4 cup of almond flour and that it turned out for them.
  15. It sounds like the secret to their good texture is the almond flour. I have almond flour on hand, so I would like to try out these soon.

  17. The kids are making a fruit salad. We're going to serve the fruit salad with some coconut whipped cream. The rest of the meal is sweet potato fries, baked tofu, and leftover rice.
  18. I'm going to make some oven baked sweet potato fries. Meijer finally brought back the bags of Earthbound Farms organic sweet potatoes. We enjoy them so much, my husband likes to eat a baked one with no butter or anything, because they're so sweet!
  19. For breakfast this morning, we're having oven roasted veggies and Beyond Meat chicken free strips with rice. My kids don't always eat regular breakfast foods like oatmeal very well so sometimes it's easier just to fix something else that they enjoy more. And hey, if my kids want veggies for breakfast, all the more power to them. LOL! We had a late night...
  20. I did bake it. It seems to have gotten done, as the juices ran clear. The cat didn't eat very much though. Do you think that it was the texture? Should I grind it up some? The cat was hanging out at the door purring as it was cooking and hubby theorized that he could smell it cooking.

  22. I don't remember. I think that maybe BRM flour mix? I don't know how the fish sticks compare to regular since I've never had regular fish sticks. But they are tasty and safe!
  23. LOL! I've been having a heartfelt desire to have a real celiac cook for me. I miss eating other people's cooking. This weekend, a lady who claimed to be sensitive to gluten wanted to cook for me. I asked her a few questions about her kitchen and then graciously turned down her offer and told her that it was really no trouble to bring my own food....
