  1. Haystacks for lunch. (build your own plate taco salad) Beans, spanish rice, salsa, tomatoes, greens, homemade vegan yellow sauce (resembles nacho cheese in appearance), and chips.
  2. Skillet lasagna, salad, and watermelon tonight. I'm really loving the skillet lasagna concept. I made it in my wok.
  3. I made skillet lasagna for lunch today. Yum! My Meijer's now carries Meijer store brand gluten-free pasta and they have a lasagna cuts variety. It is only $1.99 per 16 oz. (it's non-gmo corn pasta)
  4. Aldi's has a variety tray of hummus ("hummus quartet") now that's gluten free. Yum!

  6. I totally agree about the San-J Szechuan sauce! I found some for 79 cents a bottle at the discount store and my husband is having to use most of it up!
  7. Last night we had Thai curry with tofu, veggies, and rice noodles. For dessert we had fresh cherries and So Delicious Coconut Milk Ice cream. (the no sugar added variety) It was so good! The only trouble was that the curry was a hot meal for a hot day. I need to come up with cooler meal ideas.
  8. We had a super fun day grilling today! What really shocked and surprised me though, is that apparently my inlaws decided that the gluten-free people needed a new grill.   11. Whew, back from my Amish store shopping spree and exhausted! We hit 4 different Amish stores throughout southern Michigan and northern Indiana. Some of my great finds were Schar bread for 49 cents a bag (got 8 bags of it for 49 cents and the 9th bag free from their free box) and Lundberg rice for $1 per bag. (I got 6 bags of it, yay!   13. Yes, I do. I keep Mongolian sauce, orange sauce, szechuan sauce, terikyaki sauce, and thai peanut sauce on hand.   14. Tofu stir fry with brown rice tonight. We have a ton of different sauces on hand, so I cook it plain and then everyone seasons their own.

  17. I made the tater tot taco bake tonight, it was so good! Between 2 adults and 3 kids, we ate up the whole pan! For Memorial Day picnic, I'm making a potato salad and having veggie burgers with Udi's buns. What's on the menu for everybody else?
  18. I believe that Ortega brand is gluten free. I buy Meijer store brand which is clearly labeled gluten free. Some people like to make their own as well.
  19. Let me know how you guys like it! I'm totally making it again as soon as I rustle up the ingredients. Just wish that I could find some Cascadian Farms coupons, because I like their tater tots, but they are expensive.
  20. It is really, really good! My kids love it. It's very easy to modify it for different dietary needs too. I'm vegetarian and dairy free, so I plan to make it with non-dairy cheese shreds and the new gluten free vegetarian "ground beef" crumbles that Gardein came out with recently.

  22. You know, now that you mention it, the granola looks VERY similar to the Enjoy Life Very Berry Crunch granola. Hmmmm....Maybe I should do a blind taste test on them. LOL!
  23. The brown rice pasta that I was referring to that is sold by Aldi's is certified gluten free and has the symbol on it indicating so.
  24. Yes. Their brown rice pasta is only $1.89, which is the best non-salvage price that I've seen anywhere.
