  2. I mostly just kept an eye on my cookie sheets/ oven stuff & put away as soon as possible. I may have used nail polish on the edge of a cookie sheet at the beginning. There are paints you can get at the hobby store that you bake on coffee cups or glass. Might work for a cookie sheet?

  7. Anemia is how I got diagnosed with Celiac. The nurse practitioner I saw for my annual Pap smear, etc appointment said - “ you are extremely anemic for no reason ( diet and no periods due to birth control). Get tested for Celiac”.

  9. Trying to bring this thread back! We had chicken & black bean tacos tonight! I cooked chicken breast pieces ( that was on sale) with a can of fire roasted tomatoes and canned black beans and enchilada sauce in the crockpot. Great way to cook and not heat up your house!

  13. There is no actual “ GMO” wheat for human consumption in the US. However, many bakers/ bakeries use a special baking flour . It contains extra gluten. Somehow they can extract just the gluten proteins from some wheat and add it to the flour. It makes better bread and cake. I had heard that that isn’t popular in Europe.

  18. You didn’t say it was a rash. There is a Celiac rash called dermatitis herepetiformis. That is diagnosed by a dermatologist who takes a biopsy from the skin next to a fresh lesion. If that is positive, you have Celiac and no other testing is necessary. But the DH will not go away on a 90% gluten-free diet.

  21. I find it’s different for different people and at different times in our lives and maybe even the foods eaten with the gluten. So, sorry, there is no easy answer. when I first had Celiac, I got my reaction about 6 hours later. Now , 10 years later, it seems to be more like 12 hours.
