  1. Wow! I was a smart ass 7 years ago! And look how young I looked! ? skin is porous to a point- obviously not everything can pass thru all the layers of the skin. And gluten proteins are too large for that. People with Celiac are not a “ gluten allergy”. I know many people use that term, but it’s not exactly true.

I hope the doctor tested the basics - thyroid, B12, iron, CBC, etc. my point is- a refersl to a dietician, for help with a gluten-free diet, is a bit premature.   7. Sure. Celiac is possible. You need to remain on a gluten containing diet to be tested for it. A dietician can’t test you for it. Any doctor can order the basic Celiac panel blood tests.
  8. In the US, for food to be labeled gluten-free , it must be below 20 ppm. Many are tested at 10 ppm or less.. That does not mean they actually contain any gluten. Less than 20 ppm is considered safe for Celiacs. I am sorry, I do not have time right now to explain this. I know it has been explained many times in this forum.   11. Like gluten-free said - that is not a test to see if you have Celiac. It’s usually not done by itself- so maybe the rest of the test panel hasn’t been posted yet?
  12. Sounds like you are allergic to wheat or something in those restaurants on top of your Celiac. Celiac is not an allergy, so anaphylaxis is not part of Celiac. I hope you can get an epi pen.
  13. I have never seen gluten in OJ. Some companies lawyers have told them, that unless they test a product, they cannot print gluten-free on the package.   16. My experience has been that people who think they have no “ Celiac symptoms” actually do. They might not be Gut related. Or they realize that some things they thought were normal, digestive-wise, have gotten better.   21. In the US, if the product doe not contain gluten, they can say gluten-free. Just because there is wheat in the “ facility” does not make the product not gluten-free. “Facility” is a broad term.   22. I never liked the crust anyway! You can also take some frozen hash browns and thaw and press in an oiled pan. Give them a light spray of oil and bake them for a few minutes and use that for your “ crust”.

  25. They are gluten free. But they are fatty and salty and contain corn - all of which can bother someone’s digestive system.
