  1. Last night I had veggie-beef soup made from that leftover beef roast and juices that I had stuck in the freezer a couple of weeks ago. I actually made the soup the day before and as with many soups, this was even better the second day. Since I never use a recipe for it, it doesn't turn out the same way twice. I added chopped onion and celery, a can...
  2. I also use canola oil and don't have a problem with it.
  3. Last night I fixed a crockpot beef roast, mashed potatoes and gravy and fresh green beans. Knowing as I'm feeling very lazy right now, tonight it's leftovers of the same. Whatever roast is left after dinner tonight is going to be made into veggie beef soup to add to my stash of ready-to-eat homemade foods that I like to keep in my freezer.
  4. "Clean-out-the-fridge" stir-fry and rice. Actually I had bought groceries yesterday and wanted to use up some dribs and drabs of things that I had in my fridge and freezer. Stir-fry consisted of pork, mushrooms, yellow squash, broccoli and a partial bag of frozen green, yellow, red and orange peppers and onions . Plus gluten-free soy sauce and other seasonings...

  8. Have you tried any of the gluten-free beers? Personally I don't like beer so that's not an issue for me.
  9. I do not like tequila...but white wine (specifically Chardonnay) is my friend (in moderation, of course).

  12. I had crap for lunch (will those Christmas leftovers ever end?) so I had a pork chop, nuked sweet potato and spinach for dinner.
  13. I'm outta here to make a vat of mushroom-wine sauce (gluten-free, of course) to go with the London Broil my son is going to grill. Yes, he's been thoroughly briefed on CC. Guess I can pretty easily throw together a tossed salad, too. Dinner will be simple. Not sure what else we'll have but my DIL did buy some baby red potatoes and her father always makes...
  14. Glad to hear Simply Potatoes are gluten-free! I thought they were but I don't think I've bought any since I've gone gluten-free. Who wants to shred potatoes when you can just get them out of a bag!
  15. That breakfast casserole sounds like it's to die for! For me I bet it would work well using Jimmy Dean's Sausage Crumbles and Simply Potatoes hash browns (I haven't had those potatoes for a long while but if I recall correctly, I think they're gluten-free...I'd had to read the label).

  17. I "almost" made this...but had purchased Italian sausage with peppers and onions at the deli in a local grocery store. One of the few things I know is safe that I pick up occasionally.   18. Tonight's dinner...smoked pork chops, cabbage, potatoes and carrots. Leftovers, too, which will reappear some time this weekend. And right now I'm eating a pear.
  19. YES!!! Actually I have printed out a lot of recipes, some of which are already in a 3-ring notebook. At the rate I'm going, I think I need to pick up a larger one. I bought dividers but, of course, haven't done a thing with them yet. That sounds like a good new year's project for the dead of winter. Sheesh, if feels like the dead of winter already here...

  21. Dinner - Homemade chicken and rice soup, two slices of Udi's bread toasted and flourless peanut butter cookies. Maybe an apple or Clementine later. Lunch was the same except I had some Glutino pretzels to go with the soup. I had a colonoscopy this morning so am taking it easy on food today, which sure beats yesterday's liquid diet...and the colon prep...

  25. I had no idea what to make either so also had breakfast for dinner. Scrambled eggs, bacon, fried potatoes (from the leftover baked potato from last night). Worked for me. Clementines later.
