I'd add some parsley and dill, too (if you like it) ETA: While not an herb, if you can have tomatoes, I'd plant one of them, too (they even have patio tomatoes if you don't have a lot of space). They are so prolific and nothing at the store can compare. -

The roast chicken and potatoes sound really good! Do you have other food restrictions (besides the ones you mention)? Can you pick up some olive oil and some dried herbs (or plant some fresh) to get more variety which will enable you to make spaghetti sauce and things like that? Some of my favorite foods are budget friendly but that's the way I've eaten... -

I have a pot of chili in my crockpot. I'll have some tonight and the rest will be stashed in the freezer in single serving sizes for those times I absolutely do not want to cook. -

Skylark, that sounds really good...must try that one of these days! I was hungry for a big salad so I fixed that and added sliced chicken breast tenders. Yum! Heck, I'm such a good mom that my dog even got a chicken breast tender on her dog food. -

Not really although we had one a couple of weeks ago (a warning, that is). The weather nationwide has been just devastating this year. I'm on the Maryland/Pennsylvania border so it's not tornado alley. My son and DIL, who live only 5 miles from me, had hail damage the siding on their house. No hail right here. Weird weather. -

Sounds yummy! I will say that it was definitely easier for me cooking for a family than cooking for just me...although I only cooked for four. And we never ate expensively either. Actually my favorite foods then are still my favorite foods today. -

I'm making another stir-fry, which I'm sure I'll be eating for at least 4 meals. Going to consist of beef (now marinating in gluten-free San-J Tamari sauce, minced onion and garlic, ginger and sesame oil), onions, celery, broccoli, green and red pepper and mushrooms. And of course, rice, which I've already cooked. Maybe a glass a Chardonnay, too. -

Thanks for the info! The glass "pans" have sloped sides so I don't think parchment paper would work, although I do like parchment paper for a lot of things. I do have another pizza pan I could try but it's also only 12" so the way I was able to spread the dough, I think I should probably go to a 14" pan. Both our local Hobby Lobby and Michaels sell Wilton... -

Good to know! I used a glass Pyrex pizza "pan", which I don't believe they make anymore. It's nice because I got it really clean after having used it for years for regular pizza. I also made their bread recipe last weekend and wasn't totally happy with it...it didn't rise as much as I expected but is perfectly edible as toast. I made up my own flour mix... -

Thanks for the suggestions on using gluten-free Bisquick. I made it only once but used the recipe on the box. The cheese in the can would definitely add a lot of stability. I recall when I made it that the sauce soaked into the crust. I love Pizza Hut pan pizza crust...or I should say I used to. -

Leftover spaghetti...nice to nuke and not have to cook. Last night I made pizza using this crust: http://www.kingarthu...za-crust-recipe It uses two rises, which is unusual in gluten-free baking. And in spite of a lot of olive oil, I had to pry it out of the pan. I need to try it again after I get my King Arthur flour. Just curious if anyone... -

Why don't you try to do a lot of naturally gluten-free meals? I'm eating a lot of the same things I ate before going gluten-free...meat or fish, potatoes or rice, veggies, salads. My chili has always been gluten-free, pork and sauerkraut with mashed potatoes, soups, etc.. You might want to read through this entire thread and look at some of the recipes... -

Yes, Johnsonville sausages are gluten-free...but I check the label every time I buy them. Who knows if there might be some that aren't. I'm too lazy to make my own sauce but I always end up doctoring them up. I do have it over gluten-free pasta but see no reason rice wouldn't work. Tonight I used Mrs. Leeper's spaghetti (brown rice) for the first time... -

Dang, that would be difficult! I guess it's my emergency meal since I live alone. I like Jestgar's idea of using a crockpot. Or even to bake it in a large casserole...anything to make it easier for you. Hopefully one of those people to have leftovers for lunch the next day is YOU! -

Your dinner sounds wonderful! I bought Johnsonville Italian Sausage with Sweet Basil, which will be added to a Classico pasta sauce (doctored up with more herbs, etc and put in a crockpot to simmer all day). -

I did considerably better tonight...guess it helps to read this thread at 7 a.m. I made a clean-out-the-fridge stir-fry (marinated chicken breast strips, celery, onion, mushrooms and broccoli in a sauce of San-J Tamari, ginger, garlic, cornstarch and sesame oil) and rice. Will have pineapple a bit later. -

Last night a food pill would have worked very well! Sometimes I have weird strange unusual meals but hey, whatever works! I think tonight I may do a stir-fry...a clean-out-the-fridge stir-fry. Or a big salad. At least I'm thinking about it and it's only 7 a.m. Yeah, cooking should be an adventure...and sometimes it is! But not last night. -

Right, it would take forever...especially when I live alone! And not a very balanced meal. Sometimes I think my dog eats better than I do! It was one of those nights after working in the yard and too tired to cook.
