He might not have been a chef at Florindos but may have done this in a previous job.
And he could have put in the order slip for regular pasta when gluten free pasta was requested at any restaurant he worked in as a waiter!

If you google his name... there are at least 10 sites where other celiacs have posted and responded to his outrageous behavior. I don't see any chef jobs in this guy's future!

And, as for this guy---he sounds like he has serious anger issues.ee, angry outbursts are a sign of food intolerances....Maybe HE needs to be gluten free
That must have been the guy who was bagging up wheat bread in gluten free wrappers and selling it as gluten free bread... and when people turned up sick... they started investigating and found out what he was doing! I'd have loved to be face to face w/ that jerk.
All that said, I told my 3 gluten-free daughters about this guy and my oldest DD is sort of making it her mission to have the guy tarred and feathered! If people at his gluten-laden gluten-free pasta and got sick... I'd think they'd have a good case in court against the a$$hole.

I like any old coffee... black... no weird flavors (like hazelnut, etc). It took me a month or so to get used to black coffee after giving up dairy, but I'm a black girl all the way now!

I sent him a nice message telling him I'd keep watching because a lawsuit will be coming if he's telling people he's serving them gluten free pasta and intentionally serving gluten-filled pasta! What a world class jerk.

A fad?? Just being picky?? I'd invite them to stay w/ me for a day or 2 after eating gluten. That would make it crystal clear!!

I think I was kind of a weird celiac. The ONLY symptoms I had were unrelenting diarrhea and super loud belly noises... no pain or bloating or anything else. I only had those symptoms for a couple of months before being definitively diagnosed. It was months and months before my diarrhea subsided and I began to feel normal again. Almost a year into my GFD, I slathered butter on a huge hunk of beautiful challah bread I'd made for others and chowed it down! AND HAD NO REPERCUSSIONS!!! None! I had this wonderful idea that I could "plan" a cheat, maybe once a month. I never got to test it out tho, cause the very next time I was accidentally glutened, I was sick as a dog... nausea, wanting to vomit, severe diarrhea, and brain fog. I've never cheated since... and if I'm accidentally glutened, I can count on 2-3 days of symptoms.
So, I guess, for me, it was about a year into the GFD that I started noticing huge accidental glutening symptoms... but I think it was probably way earlier for most.

I have 3 daughters. One was diagnosed w/ bipolar disorder before I was diagnosed w/ celiac disease in my late 40s. I was diagnosed w/ celiac... the bipolar disorder kid was diagnosed about 5 years later. Her younger sister was diagnosed about 3 years after that and has suffered the most serious manifestation of celiac (possible refractory, serious urinary tract issues) and oldest daughter was diagnosed w/ celiac last year after undergoing aggresive chemo for later state breast cancer!!
A friend asked me if I'd have had kids if I'd known about all these health issues that might crop up. She's recently married a man w/ familial polycystic kidney disease and is wondering if having kids is a good idea? I told her that the whole thing is a crap shoot and would I have not had kids knowing what I know now? Yeah... I'd have had them anyhow. The bipolar and breast cancer are fairly random... and the celiac disease is pretty much managed w/ a completely gluten free diet.

NOT that I'm one to offer an eating plan... cause I don't eat breakfast. I drink coffee all morning and have lunch at about noon. Today was bacon and lettuce ('cause we didn't have any tomatoes) using Pamela's bread and Hellman's mayo. For supper, I had cole slaw w/ homemade dressing and chunks of hot corned beef I cooked yesterday in the crockpot (more cole slaw than meat). And some wine. I'm not a really good example of how to eat on a daily basis...

My last two experiences at Chili's were bad... I asked for the gluten-free menu both times... explained my whole deal... and then had to call the manager over to show him a tortilla stip in my salad. The manager said that the two salad mixes were probably next to each other. The last time, the salad I ordered also wasn't supposed to contain tortilla strips and it was FILLED w/ them... they chose the completely wrong salad mix! I told my husband (who loves Chilis) that I'd give it one more try before I wrote a scathing letter to the company, but we've not been back since. I'm not inclined to go now... after hearing your experience!!

By the time I got to a dietician, she told me I knew way more than I did about Celiac... I'd done tons of research on the 'net.
A nutritionist might be something else entirely...

I love Namaste pizza crust mix. It makes a very light and crispy crust. One mix makes 2 crusts, but you can just measure out and mix dough for one. I spread it out on parchment paper so I can cook it on the pizza stone that's been used to make regular pizza.
I tried Pamela's bread mix for a pizza crust (that's my fave bread mix!) but thought it was a little too thick and chewy. I like the Namaste much better!

I was having such bad heartburn/reflux that I was ready to go to my doc and ask her for Nexium! I realized the condition was my fault and lost 20 lbs and quit eating supper so late. NO MORE HEARTBURN OR REFLUX!!!
I've been gluten-free for almost 10 years and I've really noticed in the last few years that I never get sick! The last time was when my sister-in-law shared her flu w/ me at my daughter's wedding... fever, chills, the whole shebang. That was nearly 2 years ago.
I work w/ kids often and don't even pick up so much as a cold! I am careful about handwashing and getting the kids to use a squirt of hand sanitizer.
I think it'll get better for you the longer you're gluten free!

I'm in the very same boat! I joined WW a few weeks ago and am having a terrible time w/ my portion control and cheats!
Perfect example: Last night I chopped up awesome veggies and stir fried a little bit of a leftover porkchop and put it over rice... 8 points and a good portion! Later... the leftover rice is what got me. I put some in a little bowl and slapped a bit of butter on top and nuked it.
I'm eating better than I have in years (lots of fruits and veggies) but am still not losing weight. I'm trying HARD to walk every day.
I can stay away from gluten w/ no problem, but there's so much we CAN eat that's sabotaging me!

I miss REAL french bread
I miss ice cream sandwiches and Carvel cakes w/ cookie crumbles as the middle
I miss Girl Scout cookies
I miss Tasty Cakes
I miss Olive Garden
I miss all the fair food I used to enjoy
I miss Rice Krispie treats w/o having to buy really expensive cereal
I miss being able to order anything from any menu w/o dire consequences
I've never tasted:
A Krispie Kreme donut
Anything from Panera
A panini sandwich
Lots of things I can't remember at the moment
I've been gluten-free for nearly 10 years, but every once in a while... I'm really nostalgic for the stuff I can't have anymore.

I have a KA mixer too and no bread maker. I whip up Pamela's bread mix and slop it into a loaf pan or spoon out rolls onto a Silpat (silicone pan liner). LOVE my mixer! It really stands up to the long mixing times for bread mixes.

My doc said a scope wasn't necessary as my bloodwork was so positive. I ended up having one a few years later for GERD issues, but at the time of diagnosis, it just wasn't needed.

I was laid off 2 years ago from a really good job examining/investigating medical insurance claims and have been picking up freelance work doing QA for a transcription company. There are FEW jobs where I live (in the boonies of north central Arkansas) and I hesitate to commit to a full time (really low paying) job because my LOVE is the time I spend tutoring kids in reading (a fantastic program)and adults in ESL at the next town's Literacy Council. I can't (WON'T) give up the 2 days a week I spend there so I keep looking for work that can accommodate my volunteer work!

There's absolutely a learning curve when making your house gluten free... but we live in the boonies too and I can find almost all that I need at our WalMart. I order my very easy-to-make bread mix (Pamela's) and my Tinkyada pasta from the store that doesn't get mentioned on here but it's the name of that long river in So. America. When I order them together... shipping is free!
Eating out is hard... we rarely go anymore, but I love to cook so it's not a big deal for me. Luckily, I don't care for most prepackaged, processed food, even if it is gluten-free, so that's not an issue.
Hang in there... it DOES get easier!

If the 3-bean salad and the salad bar aren't on the celiac menu... and you ate a bean from that salad and got your salad at the salad bar... I think you found your answer. It could have been either... or both! The bean salad wasn't on the celiac menu for a reason and salad bars are notorious for cross contamination.

And then there are diabetics (I know one) who don't make any lifestyle/diet changes and simply adjust their insulin dosage to accommodate the bad food choices and portions! Yikes!

YES!! I don't know that it has to do with a glutening (for me) because I'm so seldom glutened, but occasionally I'll get a cramp near my toes on the TOP of my foot! It baffles me because there seems to be so little muscle there! I get cramps in my calves too, but way less often.

Well then... almost 10 years after going gluten free, I'm still having withdrawal. Awesome husband is so good about hearing me WHINE about wishing I could have a sausage egg Mcmuffin or a Pizza Hut pizza or a Big Mac or a myriad of other things!!
