  1. If there was a real cure??

First I'd have an ice cold Bud Lite w/ a Pizza Hut stuffed crust pizza w/ pepperoni and pineapple.

Then I'd go home and make a loaf of the country crusty loaf of bread I used to make and serve it w/ lasagna made w/ noodles that don't cost like $5./pound!

For breakfast the next day, I'd have probably 5 bowls of Cheerios.

For lunch I'd have a Subway tuna hoagie w/ the works!

I could go on and on...

  2. I was actually going to come to your MIL's defense as being kindly ignorant. Can't tell you how many well-meaning friends have served me soup and proudly proclaimed "There's no wheat in it!" only to see pasta floating everywhere!

But your MIL KNOWS and tells you that it's worth eating even if it does make you sick??

I have no words for her brand of caring... B)

  3. Not a direct answer to your question, but we went to our fav Mexican restaurant and I asked the waiter to please confirm that the tortilla chips they put out w/ the salsa were indeed ONLY corn. He went, exasperated, to ask and came back w/ a sheepish look on his face. He told me that they had just switched to a brand of corn tortilla that was DUSTED w/ wheat flour!! AARRGGHHH!!! We don't go there anymore.

  4. I am constantly trying out new gluten-free recipes on my kids. FINALLY got the cornbread dressing down and my homemade cornbread has always been gluten-free. THIS year, I'm coating onion rings in cornstarch and frying them up for green bean casserole!! The only thing I don't get to eat are those awful little prepackaged dinner rolls that ya gotta buy in the tin tray... kids love 'em.

I make the pumpkin pie crust from gluten-free crushed up gingersnaps and use the Pamela's pie crust for my pecan pie. Everyone loves it all!!

It can seem daunting, but if you've been cooking for all those years, you'll be amazed at how easily you can convert your old recipes w/ just a little work!

Good luck! And let us know how it goes!!

  5. I would think, in this sue-happy day and age, her doc would ask her to sign a form releasing him of responsibility of complications of Celiac Disease when she refuses to follow the diet. I guess the "complications" term is too broad when it comes to us, but I'm surprised the doc isn't covering his butt.

  6. I say it all the time... I must read EVERY SINGLE LABEL, EVERY SINGLE TIME!! I'm usually really good about it!!

So, I'm on this wt. loss diet that's essentially lean protein, fruits, and veggies, and small amts. of starch (for me that means rice, potatoes, squashes... the others aren't gluten-free.

My celiac symptoms are so nonexistent right now... I've never been "digestively" better!

So, yesterday I was looking for a certain brand of deli turkey breast (Boarshead) that I know is good... and took a look at the packaged deli meats that I've bought many times for yummy lunch sandwiches. I was looking for sugars and fats and salt.

Every single one contained modified food starch.

How could I be so stupid?? I amaze myself sometimes!!

    Back to label reading 101!!

  7. Looked up Celiac Disease in my 1972 nursing medical dictionary and this is what it said, in essence.

Celiac Disease is a rare condition where the patient can not digest sugars and fats. Some say that wheat and rye play a part. It's similar to sprue and some say it is the same.

(Symtoms were similar to those we know of today)

Treatment is a low fat, low sugar diet. You might want to stop eating gluten as well. If, after 6 months... you're feeling well, you can add one food at a time till you're back to eating everything you were before.

I wanna go on THAT diet.

  8. I've had every shape, color, consistency... that there is no more "normal" in my vocab.

I've had exploding butt acid that requires immediate toilet bowl cleaner, I've had perfectly formed... just like before celiac disease, I've had small pieces that are almost like "sheets" of poop, if you can imagine that. I've had dark brown... sort of dark green... and borderline dark yellow.

Been dieting lately... almost a paleo kind of diet... lean meats, veggies, fruits, very little grain. My bowels are better now than they've been since I was diagnosed w/ celiac disease.
