Manna from Anna bread mix fan here! They're easy to make and I make a loaf and 3 rolls in English muffin rounds from each mix. I freeze all the rolls and when the loaf is completely cooled, I use the knife that slices uniform slices (I got it on sale for about $4. at Bed, Bath, and Beyond years ago) and freeze 2 slices in their own zip lock. I take them out of the freezer, toast 'em, make my sandwich, and use the zip lock bag to take my sammy to work! Works like a charm!

My cornbread recipe has never contained flour and it's straight from my friend's grandmother from Alabama!
Put a few tablespoons of oil in a cast iron skillet and put it in a 400º oven to preheat.
Mix 1 cup of cornmeal
1 egg
1 cup milk
1/4 cup sugar
1 tablespoon baking powder
Mix well and pour in HOT skillet (it'll sizzle a little so be careful)
Bake for about 20 minutes. Cut and ENJOY!!
I make this much in a small cast iron skillet. When I'm having a crowd for supper... I double the recipe, dump in a can of corn, and put it in my BIG cast iron skillet that's been preheated in the oven.

I ordered this cookbook and made the yellow cake this past weekend. I was delicious!! It's the best flour mixture I've found for cakes (brown rice flour, potato starch, tapioca flour).

I am A+, as is my ex-husband... so imagine my surprise when my middle daughter, who is also a celiac, told me she is O+?
Two A+'s don't necessarily add up to all A+ kids.

I was going to suggest making him go w/ you into the bathroom... but you don't seem to have the molten acid volcanic explosions I have when I am glutened. THAT would make anyone believe that celiac ain't in my head!!

I make these every holiday time when I can get the kids to come and roll balls ... a recipe makes a ton!! I freeze 'em and have 'em for months!!
Gotta love chocolate and peanut butter!!

I was thinking that being gluten-free is just not that big a deal (once you get the hang of it), but if your son has not been definitely diagnosed and you are separated w/ a husband who doesn't agree w/ the whole gluten-free thing... a definitive diagnosis might be necessary.
I like the idea of a MEDIC ALERT bracelet for kids w/ celiac... it makes it much more "real" and serious and people (like separated, unbelieving fathers) pay attention and take it all seriouslyl.

Another bad experience at Applebees here. I went thru the whole litany of what I could NOT have on my salad... no croutons, no bread anywhere, nothing that might have contained flour in its lifetime...
So, I get to the bottom of this shrimp salad bowl to find a pile of chinese noodles! I called the waitress over and pointed to them and asked, "What do you suppose these are made of??"
"Those have wheat?" she asked.
UGH!!!

Really good sounding idea for kids. Teachers and parents are so much more likely to believe an Emergency ID bracelet than just saying your child can't eat wheat, etc. How many say, "Oh, just a little won't hurt."

All of us kids were allergic to eggs when we were babies. I'd read that early introduction of solids was related to allergies, so I didn't start my kids on solids till they were 6 months old... before that, nothing but boob juice.
Even then... no eggs or meat or citrus till at least a year. I made ALL my own baby food.
I was the only one my mom nursed... the only one w/ Celiac.
I think it's all a crap shoot. Breastfeeding is a good thing. Just enjoy your baby and hope celiac doesn't show up!

I'm a Books-on-celiac disease freak. As soon as I'm done w/ one, I'm back at the (FREE) library getting another! Right now I'm listening to actress Blair Brown read Isabele Allende's Zorro to me. It's awesome!

I just spent the better part of 2 years using Penlac nail lacquer... a prescription nail polish... for fungus. Mine blossomed after the trauma of accidentally jamming a huge needle in to my foot that required surgical removal. The foot doc told me that everyone has the fungus... he said if he swabbed the inside of any shoe, he'd find it... but it's a trauma that usually makes it "blossom."
I didn't even consider the oral medication... w/ any sort of autoimmune issue?? No way!! The Penlac worked but you have to be super diligent ... it just takes a long time.

I tried several recipes at home... at least two of Bette Hagman's. They were a lot of work... tasted okay for the first slice or two... texture wasn't so good.
I'm Manna from Anna's biggest fan. I order the mixes by the case... make a loaf and a few rolls (in english muffin rounds)... slice the loaf and freeze 'em.

Recently joined WW (again!!) and have been going for 2 weeks. I've lost almost 6 lbs. and am so encouraged. I've cut out my fav Manna from Anna bread just until I can get a handle on dieting ... and other things like rice and potatoes.
When I was diagnosed w/ Celiac, I hadn't lost any weight and proceeded to put on about 30 lbs. thoroughly enjoying the foods I CAN have (rice, gluten-free pasta, potatoes) rather than be upset at what I could no longer have.
I'll incorporate them back into my diet but not till I have a handle on super healthy eating again.
The crappy reality is that all the starches we can have are all a higher glycemic index than regular ones. UGH!!

I used to tell people it was wolverines trying to scream their way out of me! My daughter calls the noise her alien baby... haha.

Another lunchbox and ice pack user here. I bring my breakfast and lunch to work every day and have several paks in the freezer.

I'm interested because last night I could NOT keep my legs still when I went to bed.
Sometimes in the evening, I'll find that I can't keep my lower legs still and have to move and stretch them almost constantly... and of course it almost ALWAYS happens on long plane flights... but this was the first time it happened when I went to bed!
There's no pain involved... just the feeling that I HAVE TO move my lower legs!!
Edited to add: Our "newspaper" doctor always has folks writing in for the soap under the sheet trick. They SWEAR by it. I thought it was for leg cramps. I even tried it once for those cramps that send you flying out of bed to flex your calf muscle, but I don't think it did anything. That'd sure be an easy fix if it does work!!

I'm not lovin' it so much. I'm resigned, but not lovin' that I can't have my favorite food... my homemade breads... ever again. My "big D" wasn't so bad and I didn't feel crappy. I didn't get to lose ONE POUND without trying desperately ... rather, I've GAINED weight I didn't need!!
So, now I'm on Weight Watchers, not eating the fav foods I CAN have because I have don't have enough willpower to keep from eating more than I should. I've become much more gluten sensitive, so that now the "big D" IS a big deal... and I'm still huge and still can't eat my homemade bread.
Oh, don't mind me... I'll go get some cheese to have with my whine.

Ooooh... I almost forgot. One of the BEST things I learned on here was that the macaroni in Kraft Mac and Cheese isn't gluten-free, BUT THE CHEESE POWDER IS!!!
My DD (diagnosed last year) was the happiest to learn that!! You can buy it in a shakey can like Parmesan cheese in some groceries!

I learned that I was NOT gluten-free cause I thought it was okay to pick my croutons off the salad and maybe blow away any crumbs. Folks here set me straight right quick!!
I've sent so many people here, it's not even funny!! This place is the best!!

I was hardly sick so I felt so sad but mostly MAD. My fav thing on earth to make was bread... kneading the dough, smelling it baking... and now I make a bread mix.
My daughter was diagnosed last summer and was really depressed. She loved to bake as well... breads, cakes, cookies.
Now, less than a year later, she's just discovering that baking is simply a matter of finding the right combo of flours and she's much less depressed... and on a mission to bake again.
It really does get better... and is easier if you like to cook.
Is It Just Me? But Some Of This Stuff Seems A Bit Overkill.

I was like you... my reactions after eating gluten weren't severe. After I'd been gluten-free for a year, I melted and wolfed down a huge slice of homemade wheat bread w/ butter as family stood around yelling "NOOOOOO!" Guess what? Nothing happened!! I was pulling the burger off the roll and picking the coutons off my salad.
Now it seems like I can be in the same ROOM with bread and gluten and react. I don't try those experiments anymore.
I read every single label... every SINGLE time.
