  1. Wow... really glad to see this topic cause I have questions!

    I was allergic to eggs when I was a baby, as were my sibs. We all outgrew it and had all the childhood vaccines, which would have been incubated in eggs, right??

    So, I always shied away from the flu vaccine cause I knew it was incubated in eggs.

    But then I found out my sister (the most allergic to many, many things) has one every year and my brother also has one.

    Now I'm the only one of us sibs who's been positively diagnosed with celiac disease, altho I am certain my sister suffers the DH form and my brother has mild DH symptoms. They won't get tested... yet.

    So, when I mentioned to my fam doctor that I was allergic to eggs as a baby (long outgrown) and now I have this automimmune thing going on... should I get or avoid the flu shot.

    She said, "Don't get one."

    Has anyone else wrestled with this?? I get scared every year when they start talking about the seriousness of the flu. You only have to have the REAL flu once in your life (I've had it twice) to know you NEVER want it again!!

  2. I am certain I am her best customer! I buy it by the case (the regular mix) and make it into loaves. I slice it with my handy-dandy knife that cuts uniform slices and freeze them in packets of 2 for sammies to take to work. I also make it in English Muffin rounds for rolls.

    Anna (with whom I've emailed) said it makes great pizza crusts too, but I've not tried that.

    It was the ONE terrific find that took away all my feelings of deprivation at having to follow a gluten-free diet.

  3. Hey Ken Ritter!! We're making a pilgrimage to the PF Changs in Marlton, NJ, next weekend, as it's the only one remotely near us! (and it's probably more than an hour away!!)

    I was there for the first time in Portland, OR, and I can't wait to go again!! I found the servers incredibly attentive to my dietary restrictions and the food was YUMMY!!

  4. My cornbread recipe's always been gluten-free. It's my friend's southern grandmother's recipe

    I put a few tbsp. of oil in my small cast iron skillet and put it in the oven while it preheats up to 400º.

    In a bowl, I mix:

    1 cup corn meal

    scant 1/4 cup sugar

    1 tbsp. baking powder

    1 cup milk

    1 beaten egg

    When the oven's heated, carefully take out the skillet and pour in the batter. Cook for 20 min. or until top is browned and pulling away from the sides a little. Leave it in the skillet for a few minutes so you're sure the middle's cooked. It's easy to remove and serve on a plate.

    YUMMY!!!

  5. I've been making these for many, many years.

    Buckeyes

    1 lb. butter, softened

    2 lbs. peanut butter

    3 lbs. confectioner's sugar

    Mix together well and shape about a million balls on to cookie sheets

    Melt semi-sweet chocolate chips in a double boiler and dip each one with a toothpick and put on the cookie sheet. Put them in the freezer till they're hard and then store them in zip lock bags in the freezer.

    I make 'em every year and give them out as gifts.

  6. Have you ever tried to use it to make turkey stuffing?

    I might try it with a smaller chicken before I ask the whole family to have gluten-free turkey stuffing, but I'm so excited at the prospect, I can't even tell you.

    I've tried cornbread dressing several times and it's just not right. What I really need to do is belly up to my friend's table, cause she's been making real southern cornbread dressing forever (I use her cornbread recipe... always has been gluten-free).

  7. I wasn't thinking... that's what. Of course you're all right. I was such a dolt to think that picking croutons off my salad was okay. I really was thinking that if I'm not having symptoms, I'm okay.

    DUH... that's why I come here. For the good advice I always get.

  8. I'm only 3 years gluten-free, but my middle daughter's just been diagnosed and I realize that it's become a pretty easy part of my life. She's thrilled that she doesn't have to find out all I've found out on her own, but she's still in the shock of it and wondering, too, what's left for her to eat.

    For example... she's a vegetarian and loved veggie burgers. I just found a good recipe for black bean burgers and emailed her the recipe. She loves to cook, which also helps a lot.

    When we go out I find waiters and waitresses are as friendly and accommodating as you are friendly to them. I've also found more and more celiacs as I talk about it to waitstaff. I know I can always order some plain fish or meat or a salad... I am not so sensitive that I can't just pick off the croutons and blow any crumbs away. (I don't pull stuff off of bread/rolls anymore tho)

    Finding Manna from Anna bread really helped me. Being able to make a sandwich is really satisfying.

    Good luck! And don't give up!! It DOES get easier.

  9. I never lost weight... even having diarrhea for months and months. Since going gluten-free I've gained about 30!! My DD's doc told her people with celiac disease either lose weight or gain it. She got the wt. loss part, I didn't.

    I can't seem to get it off either... so I'm stepping up my exercise in a big way hoping that'll help! If I'm not lighter, at least I'll be in good physical shape.

  10. I believe I was the bread queen. I used to make the most delicious braided Challah breads and a round country loaf with a crusty outside... I am drooling here!! That's my first and foremost wish!! Bread and butter!!!

    Second I'd choose Pizza Hut's Stuffed Crust pizza with pepperoni and pineapple... and beer (that's ONE food!!)

    Lastly, real chocolate cake... made with flour... light and fluffy... with chocolate frosting!!

  11. I'm with SharonF... I'd have spoken to the manager. Would they react the same way if it was a kid with a peanut allergy and the mom was asking those questions? I think not.

    I've been super lucky lately. The last several times I've gone out to eat, I've had a waitperson who knows someone with celiac disease! They've been very supportive and helpful...

    Sorry your experience was so awful!! Don't give up tho!
