  2. Interesting ... I could try braising a chicken breast with gingerale on one of those nights when my husband isn't around. That would be ... well, my idea anyway of ... fun! I want these! Tonight I am making: -Gujarti (Indian) style Hot Sweet and Sour Potatoes -Ong Choy (a type of greens, like Bok Choy) cooked Indian style in the...
  3. pricklypear - I think this is intensely creative. I had no idea people cooked meat with soda! It's truly American cuisine. I don't eat beef, but what is good with chicken? love2travel - hope your postings mean that you're feeling better again. I had a friend come over tonight, and served: -roasted beet & fennel soup -spinach risotto She...
  4. I am proud I looked up a recipe online for Singapore Carrot Cake, and it looks totally doable. I'm having quinoa with roasted vegetables (sweet potatoes, green pepper, tomato, eggplant, onion) - easy and good for an early Sunday supper. Also, it's vegan, no lactose. Note that quinoa has protein so it's actually quite a filling meal.
  5. I went to SA last year. It was a great trip. I'm still in recovery and didn't want to stress my gut, and SA is one of the few places outside of North America and Europe where I felt safe traveling. SA is as industrialized as any Western country. Of the cities I visited (Jo-Burg, Durban & CT), Cape Town is the most progressive, and it was easy to find...
  6. I was inspired by the discussion about all the different kinds of rice on another thread to make Thai sticky rice. -Thai sticky rice -wilted spinach with peanut sauce -slivered green cabbage, red pepper, mango, banana & scallion salad with a chili garlic dressing Vegan!

  8. Marilyn - Congratulations on your success with the papaya trees!
  9. Vegan meal: NOTE - I realized later that this isn't actually vegan. Vegans don't eat eggs. But it is dairy-free. -garlicky mushroom masala omelet served over brown rice -stir-fried green cabbage with fennel seeds Both recipes are from Madhur Jaffrey's "Quick & Easy Indian Cookbook".
  10. Marilyn, where do you live that you have fresh papaya? That's so awesome.
  11. -spicy Moroccan tomato soup, with coconut milk & toasted slivered almonds -maple mustard roasted brussels sprouts -sauteed polenta rounds Vegan tonight! love2travel, I know, it's so hard to avoid sugar I just love to eat too much.
  12. I got curious, and just now figured out what caramel is, basically almost-burnt sugar (just like the caramelized onions). I never made it before, so until now it was something that showed up in desserts at restaurants or in ice-cream. Sadly, as much as I like the taste of caramel, I don't want to try to make it myself now, since I'm avoiding sugar these days...
  13. There's an article in the NYTimes about the kitchen of Mark Bittman, formerly one of their food writers. I love it because it includes a photo of him standing in his kitchen, which looks like a typical NYC kitchen. Check it out. It might make you feel better, or even inspired! http://well.blogs.nytimes.com/2008/11/20/mark-bittmans-bad-kitchen/ ...
  14. Yum! I seem to recall seeing a recipe for gluten-free gnocchi somewhere on the board. Comfort food tonight. And vegetarian too, even though my husband is still away. -classic tomato soup -Tinkyada brown rice pasta with broccoli rabe & classic pesto -marinated black olives

  18. Black bean tortilla soup with avocado halves. And a big pile of wilted spinach. The soup was meat, egg and dairy free.
  19. I had a curried sweet potato soup for lunch, so I decided against that. But pumpkin soup is wonderful! mushroom - your recipe sounds easy and delicious! Next time, I have the ingredients around and need an entree ... What I really want to make now is ravioli with a pumpkin filling. I found out gluten-free ravioli are pretty easy. So, soon!
  20. After reading Simona's post, I want homemade gnocchi! But here's mine tonight: (vegetarian meal) -brussel sprouts & sliced apple with thyme -quinoa pilaf I also have some pumpkin, and am trying to decide what to do with it. I think I might just bake cubes of it.

  24. I love this thread. I get inspiration from it. Two things: 1. I made hasselback potatoes the other night. I'd never heard of them before a post from love2travel. They were easy(ish) and delicious. Highly recommended! 2. Tonight's meal, vegetarian as usual: -grated carrots & beets, marinated in rice vinegar, sesame, sugar, salt & seaweed ...
