  1. -spicy Moroccan tomato soup, with coconut milk & toasted slivered almonds -maple mustard roasted brussels sprouts -sauteed polenta rounds Vegan tonight! love2travel, I know, it's so hard to avoid sugar I just love to eat too much.
  2. It's completely possible. My husband is vegetarian so most of my meals are gluten-free and meat-free. Many of them are or could easily be made dairy-free as well. I posted a few meals lately to the "What are you cooking tonight?" thread that are in this vein. It definitely helps to experiment with all kinds of beans, nuts, corn products, quinoa...
  3. I got curious, and just now figured out what caramel is, basically almost-burnt sugar (just like the caramelized onions). I never made it before, so until now it was something that showed up in desserts at restaurants or in ice-cream. Sadly, as much as I like the taste of caramel, I don't want to try to make it myself now, since I'm avoiding sugar these days...

    ARCHIVED Nueropathy

Neuropathy was the first symptom I had (the digestive cramps came years later). By the time I figured out that I was reacting to gluten, I had so much pain that it was hard to walk. I took B12 and magnesium and Vitamin D supplements early on. After several months and then again after six months, my vitamin and mineral levels were tested, and while B12 was...
  5. There's an article in the NYTimes about the kitchen of Mark Bittman, formerly one of their food writers. I love it because it includes a photo of him standing in his kitchen, which looks like a typical NYC kitchen. Check it out. It might make you feel better, or even inspired! http://well.blogs.nytimes.com/2008/11/20/mark-bittmans-bad-kitchen/ ...
  6. Congratulations on your pregnancy! Do you mind if I ask how old you are?
  7. Also, I believe that yolo self-identifies as someone with a high sensitivity to gluten. She is relating her experience, and if the original poster is someone who also suffers from high sensitivity to gluten, this may be useful. Certainly, it's common on this board to suggest avoiding hair and skin products with gluten in them, which I thought was really out...
  8. I don't think that this autoimmune condition or disease (celiac/gluten intolerance) is as simple for many of us as "I eat gluten/I am sick; I stop eating gluten/I get better". That is the perspective of most M.D.s at this point, but the experiences of people on this board say differently. Personally, I think that other modalities besides Western medicine...
  9. I second the Specific Carbohydrate Diet. I was in a lot of pain, reacting with stomach cramps to every food I put into my body, even water. I started the SCD and my symptoms receded quickly. During that period, if I accidentally ate rice or something, I'd feel it immediately. My only regret is that I didn't stay on it longer, because I think it works slowly...
  10. Yum! I seem to recall seeing a recipe for gluten-free gnocchi somewhere on the board. Comfort food tonight. And vegetarian too, even though my husband is still away. -classic tomato soup -Tinkyada brown rice pasta with broccoli rabe & classic pesto -marinated black olives
  11. I make my own stock now, when I used to buy it. I can't believe I did that! - it's so easy to make, so much cheaper, and uses up leftovers. I suspect it's healthier as well, but I can't confirm that. Oh, and it tastes so much better. For veggie stock, since I use up leftovers, I never make the same stock twice. I save peelings from root vegetables, the...
  12. No one's cooking tonight? I'm looking forward to meat tonight since my husband, the vegetarian, is away. -pan-fried spinach & feta chicken sausage (they didn't make them like this when I was a kid) -jalapeno applesauce -sauteed broccoli rabe with crispy garlic pieces* -polenta rounds *I slice garlic thinly and fry it in some olive oil until...
  13. I had an experience where I ate gluten (like you completely by accident, served it after being told by the waitress that the chef would leave it out of a dish) and my reaction was very different. I did not have an immune reaction to the gluten. Instead, my body treated it as a toxin and worked to expel it (yes, bad diarrhea for the next four hours, but then...
  14. Another vegetarian meal: -olive tapenade, orange & baby spinach salad -potato gratin with tomato, basil & parmesan Getting into salads now as the weather warms up (and leaving behind root vegetable & squash purees).
  15. Some forms of lactose are easier to digest (no matter who you are), so I started with those. In order, it goes: strained (i.e., Greek) yogurt, regular yogurt, goat milk/cheese, hard cheeses such as parmeasan, cheddar, gouda, and then soft cheeses. Ice-cream is one of the hardest foods to digest for anyone, but especially for people who have issues with lactose...
  16. I love this place too. It's one of the few places I can eat in Chinatown (the other notable place being "Hong Kong Station" on Bayard). The food is kind of heavy for my taste these days, but very much in line with traditional Cantonese Dim Sum. Besides the food, it's fun for the odd mix of people it attracts with its unusual menu - from pierced, nineteen...
  17. -potato parsnip patties with jalapeno applesauce -slices of sharp cheddar -brussell sprout, carrot & date slaw Vegetarian!
  18. Congrats! I'm on the run up to 2 years as well. What do you still struggle with? Or, is this the wrong place to talk about that?
  19. I thought that I'd mention that before going gluten-free along with my symptoms of stomach pain (diagnosed as gastritis) and neuropathy, I suffered painful PMS that would keep me prone for a week. Along with cramps, my flow was heavy and very clotted. My PMS got worse over years, but suddenly became excruciating when I first felt stomach cramps and the worst...
  20. I think there are different directions you could go with this. I've heard repeatedly that entrepreneurs will be most successful concentrating on a single product that they do well, at least to start. If there are no other dedicated gluten-free (or vegan) bakeries in Tampa, then you may find you can concentrate solely on baked goods. You may find yourself...
  21. Your loss is so sad, and I'm sorry. It sounds like your pregnancy may have been possible though because of the changes in your body from a gluten-free diet. That's hopeful if or when you decide to try again.
  22. I was a pescetarian (vegetarian + fish) for over a decade, and my husband is still vegetarian. I have no problem creating nutritious, balanced, gluten-free, vegetarian meals at home. Not that I eat just tofu. My diet includes a variety of cheeses, dairy, nuts, beans and eggs, as well as, occasionally, soy. I have had a nutritionist review my diet to make...
  23. I haven't done this myself, but it does inspire an idea. You could add a strawberry syrup into a coconut milk tapioca pudding (instead of vanilla basically). What a nice idea for Valentine's Day! Ingredients Strawberry syrup: 1 cup sugar 1/2 cup water 2 cups rinsed, stemmed, and chopped strawberries Pudding: 2 c. water 3 tbsp. small Tapioca...
  24. I made banana muffins out of coconut flour a few days ago using a recipe that Skylark posted in the "What's for breakfast?" thread: Open Original Shared Link This was the easiest gluten-free recipe for baked goods I've ever made! It really was that easy. The coconut flour soaks up the moisture from the eggs and everything adheres easily. The texture...
  25. I had banana muffins made with coconut flour using the recipe Skylark posted above: Open Original Shared Link They were the easiest gluten-free goods I've made! I'm definitely going to make more pastries with coconut flour. The taste was delicious. Next time I'll use cardamon instead of cinnamon and see how that goes.
