  1. We had vegetable risotto for a late lunch. I'm undecided on whether to cook dinner. We we proabbly just snack and graze on leftovers.

All the recipes I know of are not really fast--things like meatballs, meatloaf, stuffed bell peppers and casseroles that take an hour in the oven or need to be started in a slow cooker in the morning. The only thing I can think of is if you have some pre-made gluten-free pizza crust you could just fry up the sausage in a skillet, drain well and throw it...
  3. Salad and turkey sandwiches on Rudi's. It's 101 degress out there. No way I'm cooking!
  4. I'm going to try NOT to cook tonight! It is HOT HOT HOT out there! Plannign on making some rice paper wrapper spring rolls and maybe some coleslaw.
  5. It WAS delicious! My crust did not quite workout the same as the recipe. It was more like dumplings on top than a crust. it was good though. My husband declared it the BEST chicken pot pie he has EVER had and I have not made chicken pot pie for around two years (well before going gluten-free). I could not even taste the coconut milk. Success!

  8. That would be one LONG dinner party. I live in VA. You can come to my place for dessert and watch the sun set over the bay though. Tonight we had chicken fried rice and sugar snap peas.
  9. Hmmm...I just search that nearly normal flour mix and foudn the recipe. I have masa harina and it is a very finely ground flour, not like corn meal and not like corn starch either. I'm tempted to try it in place of the corn flour now since I can't use BRM. I will let you know if I do. Masa harina is great from making homemade corn tortillas.
  10. I have a whole chicken in my slow cooker with sweet potatoes, carrots, onions and garlic cloves. Seasoned it with rotisserie seasoning. Will probably pull something green (spinach, green beans or peas) out of the freezer to steam when the chicken is ready. We are trying to eat down our freezer and cabinets for an upcoming move and our fridge is getting...
  11. Oh, that sounds good! Thanks for shaing! I might have to try making it in the slow cooker. There's no way I'm turning on my oven. We are in the upper 90's here today. I STILL don't know what to make for dinner. I'm leaning toward turkey sandwiches on toasted Udi's bread and baby carrots because I really don't want to cook.
  12. Sounds good! Where do you find gluten-free pitas (what brand)? Or do you make them? I have seen recipes, I think, but I have not been brave enough to try making them. With the hot weather a pita sounds faboulous!

  19. I have a pan similar to this one: http://www.wilton.com/store/site/product.cfm?id=1060C633-1E0B-C910-EACFE8DFBA39D12F&killnav=1 I'm pretty sure it was under $5 when I bought it in the store. I had to buy new pizza pans because I used pizza stones before gluten-free and those don't really work with this type of crust anyway. You might try some parchement...
  20. This is my favorite crust. I've never had trouble with it sticking that much, but I use a non-stick pan and pour extra oil on it. It for sure needs two rises. I have tried skipping a rise before when I was in a hurry and it was still good but was a more dense crust. ETA: I have done it with both the KA flour mix and using my own flours as called for...
  21. We had a cheeseless turkey pepperoni pizza on a tapioca crust (my made-up version of Chebe without dairy).

  23. Yum! I've done breakfast in the crockpot several times with great success. I think I will make an overnight breakfast casserole this weekend.   24. Tonight we're having Ahi Tuna Steaks and Baked Sweet Potatoes ("baked" in the slow cooker) and probably something green, Steamed Brocoli? Green beans and almonds? Spinach? I'll decide that at the last minute as usual.
  25. Your dinner was a lot healthier than mine! I panicked at the last minute and made some Tinkyada pasta and marinara sauce. Probably could have made a salad to go with it but all I really wanted was the warm pasta.
