Thanks for the ideas! I can't eat quinoa but everything else is doable--well except the grilled veggies--I live in an apt and we are not allowed grills. I think I am going to make some Dahl in the slow cooker tommorrow. I found this recipe to try: http://stuffimakemyhusband.blogspot.com/2008/06/slow-cooker-split-pea-dal.html Thanks for the other ideas... -

That actually sounds good to me...now that I have eaten, LOL! However I only have frozen Ahi Tuna steaks and rice cakes. I don't suppose they would make good sandwiches. -

I ended up doing boneless skinless chicken on the stove-top seasoned with Paprika, onion powder, garlic powers, chili powder, tumeric, Kosher salt and pepper...sort of my own version of seasoning salt or a rotisserie type blend. Then I made some cooked baby carrots with brown sugar and a touch of honey. And for a starch I microwaved a bag of Green Giant... -

I have no idea! Argh, I'm in a rut and I need ideas...I currently have ground chicken, boneless skniless chicken breast, Tuna steaks and ground beef and none of it sounds good to me right now....Maybe a veggie stirfry instead? I have fresh summer squash, carrots, cereley, onion, garlic, frozen peppers, frozen peas, frozen brocoli... I'm so tired of rice... -

We had cheeseless gluten-free pizza with Muir Glen pizza sauce and heavy turkey pepperoni. Turned out great! I recently tried the vegan cheese at Zpizza to see if I liked it and the taste made me ill--No offense to anyone that loves it but I had to scape all the fake cheese off and eat the gluten-free crust. Even then I was burping up the taste of the... -

Tonight we're having baked Maui Maui, brown rice and a salad of lettuce, mango, avocado, roma tomato and red onion slices. I just had all those things to use up and so I thought why not make a salad. I'm just going to use olive oil and a splash of lemon for dressing. -

Oh I have seen something similar with cauiflower before for a low carb crust. Too bad I can't eat cheese. I wonder if this would work with vegan cheese or just with egg and zucchini. I love zucchini. Hmmm....I shall have to play with it sometime. I want to go back to a low carb diet eventually so I will keep this recipe in mind. thanks! -
