  8. That sounds really good. I have done something similar with chicken instead of salmon. I also sometimes put cellophane rice noodles or bean thread noodles in the wraps to vary the texture. I love how you can do just about anythign with rice papper wrappers and the results are usually good cold for lunch too!

Chicken fried rice with lots of veggies is a meal in itself but I'm really craving spring rolls too.

  18. Last night we had Lasaagne with gluten free noodles. I recently found Tinkyada pasta in stores near me. I was so excited because I had read great reviews of it here. It turns out y'all were right! It tasted JUST like regular lasagna. My DH even asked if I sure it was gluten free. Success!

  23. Tonight I'm making Chicken Alfredo with steamed broccoli. This will be a huge test for me on whether I can tolerate cheese/cream again. I've been able to eat small amoutns of hard cheese and butter for a while now, but the last time I had anything creamy my body rebelled, lol.
