  1. I've been gluten free for almost 8 months now. I have had an allergy to pork for a few years. My throat used to close up when I ate it. Well this weekend I accidentally ate pepperoni (long story, but I thought it was turkey pepperoni until I tasted it) and I had NO reaction. I did freak out and got myself some benedryl about twenty minute later just to...
  2. 1. Anywhere from 20 minutes to two days later. It seems to vary for me. 2. If my body "catches" it with 20-30 minutes I get a headache, nausea and sometimes throw up. Then for the next 4-5 days I have bad neurological reactions-- muscle and joint pain, shaking hands, fatigue, brain fog, etc. If my body doesn't react right away and the reaction is...
  3. I think living in a moldy house may have triggered my celiac to start producing really bad symptoms. Perhaps it weakened my immune system enough? All I know is I started getting really sick in that house and we found black mold growing behind the fridge when we moved out. I think I had signs and symptoms that were mild my whole life though. I don't think...
  4. I also wanted to say that for salt, I use Kosher salt and Sea Salt. They are the only ones I could find that had just "SALT" as an ingredient. Plain table salt should be gluten free, but I have read that the iodine in it can irritate DH so I stay away from plain table salt.
  5. All of McCormick's single ingredient spices are gluten free.
  6. I had a reaction to Chick-fil-A's fries too. I was so sad that I can't eat there, at least not at my local one. Not all restaurants are the same. This is also a good lesson that we can't just order something that "should" be gluten free without asking about cc and explaining the situation. If you feel like chancing it again, go in during a slow time and...
  7. Thank you Roda for the link to this and for bumping up this thread. I think I am just really sensitive to the barium stuff.
  8. This is good to know, even though this post is four years old. My husband had to take Barium from the EZ-EM company. Hopefully they have not changed their formula.
  9. Gyro meat is SO easy to make. It's one of the things I made that was naturally gluten free prior to going gluten free. Here's a sample recipe: http://allrecipes.com//Recipe/traditional-gyro-meat/Detail.aspx You can use other types of ground meat as well. I often do all lamb or all beef. I've also made it with bison and ground chicken. If you really...
  10. I eliminated all grains for one month (I also cut all carbs--no potatoes, no sugar except a small amount of honey and no dairy) when I was trying to figure out what was making me sick. Most of my meals were pretty boring--steamed vegetables and grilled meat. Two of my sources for recipes were Mark's Daily Apple (listed in a previous post) and Doug Kaufmann...
  11. That is good info! I usually buy the big fresh packs of meat and freeze two or three in quart size freezer bags, but your way would cut down on the number of ziplocs used.
  12. I don't know the answer because I'm not familiar with the brand, but I'm wondering if they are just chicken breasts, what could be in them that could contain gluten? I haven't been doing this long and most of the time I buy my chicken fresh, but I'd like to know for future reference what to look out for. Thanks and I hope you get you answer. Sometimes...
