  9. Isn't homemade mushroom soup awesome? It is a revelation. I cannot recall when I last bought a can of soup - it simply is not necessary.
  10. We are grilling tonight: - porterhouse steak with chipotle compound butter and grilled portabello shrooms - baked potatoes with bay leaves - grilled (marinated) zucchini and red pepper skewers - grilled watermelon with mint vinaigrette
  11. It is hard to believe, isn't it? Man, I love Europe. Too much. Oh, the food! The availability of wondrous ingredients within miles astounds me. As our house is near the sea we have all sorts of sublime possibilities. Already practically counting the days until our next trip (end of September). Hopefully tomorrow or Sunday will be a fancy pants...
  12. Just got back from nearly a month in Croatia and Italy. It was AMAZING! We had the time of our lives (as we usually do in Europe). It is not easy coming back but it is life. While away, we had such fantastic fresh food. Will share on another thread. Sort of jetlagged so am making it easy tonight... Korean Sweet and Spicy Shrimp Mung Bean Noodles...
  13. Having trouble with my thumb that I sliced a chunk from so we are having: - leftover meat loaf with red wine glaze - baked potatoes with lemon chive butter - minted peas - strawberries with balsamic
  14. Our small town literally has only fast-food places. That is it. We drive 3 hours to the city when we want to eat out at great high-end places. Thankfully I love to cook so it is rarely an issue.
  15. I'm surprised I haven't done it before! Anyway, there are no safe places to eat out. We tried one last night but the employees had no clue about celiac, gluten, allergies, etc. so we just returned home. Then we go on vacation Wednesday!
  16. Chopped off a piece of right (dominant) thumb yesterday on my mandoline so am not cooking. DANG IT! Amazing how much we take our thumbs for granted. Makes things tricky (like this typing which is taking ages).
  17. We are getting a bit of snow today and there is some in the forecast for tonight so again I am making comfort food: Meatloaf with Red Wine Glaze Creamy Mashed Potatoes with Caramelized Shallots and Mustard Seeds Saffron Glazed Carrots
  18. Cleaning out the fridge in preparation for vacation: Thai Curry Shrimp (using up some lemongrass, kaffir lime leaves, shrimp paste, etc.) with lots of extra sauce for mung bean noodles. I love making curry pastes - the house smells so incredibly aromatic! Unsure of the sides at this point.
  19. How about while we are on vacation soon? Then when we get back you will be settled nicely and can have a lovely meal waiting for us.
  20. I am making pizza and topping it with fresh burrata, arugula, prosciutto as well as some of my pistachio pesto.
  21. Yes - I just love turning inexpensive cuts into something divine! Definitely the best (and only) way for many cuts, that is for certain.
  22. Good for you! You will find that so many things are very easy to make gluten free. Most mains, in fact, are naturally gluten free anyway. Just because we have celiac it does not mean we have to be restricted to blah foods. We can enjoy fantastic foods (except for those who have so many other restrictions which is so sad).
  23. I'm honestly surprised I don't weigh 300 lb because we eat like this about six days of the week. Often seven. But I try to keep our diet balanced (not always). Man, sorry you can't have chorizo. I love the stuff. Oops - I meant that chorizo sucks. Dull. Boring. Predictable.
  24. An all-day braise. I LOVE braising. Gigante Lima Bean and Chorizo Cassoulet Browned Butter Balsamic Sauteed Broccoli Rabe Maple Syrup Flavoured Cornbread
