  1. Lots! Muscovy, mallard, domestic tame (my brother raises them). Are you looking for suggestions for roasting a whole duck, duck breasts or other (i.e. foie gras, duck confit)? I have tons of duck recipes as duck is one of my favourite things in the world to eat! Do you want recipes or cooking techniques?
  2. Finally not feeling like I am half dead! After not cooking for over a week I am back in the kitchen, doing what I love most. No longer very nauseous. Just getting over an intestinal infection. So, we're having simple: - roast chicken with herbs, garlic, etc. under the skin and roasted lemons - makes great jus with a splash of white wine - roasted...
  3. The last of the duck - this time pomegranate glazed. Lemon-infused rice. Two kinds of deviled eggs - brandy truffled and horseradish. Steamed broccoli with crispy capers.
  4. We're having duck again tonight but differently. This time I am searing it (keeping the fat for roasting truffled fries) and eating it with a roasted plum sauce. Divine. Am making funky sweet potato fries and grilling zucchini with mint vinaigrette. If we had leftover risotto I would be making arancini! Next time...
  5. Feeling a bit better than yesterday so am making: - Seared Duck Breast with Sour Cherry Gastrique - Foie Gras Mousse with Pistachios - Simple Buttercrunch Lettuce Salad with Roasted Red Peppers and Vanilla Bean Vinaigrette - Risotto Milanese A bit on the rich side but the past few days have been far less so.
  6. We have no latin market here but our store FINALLY got in poblanos for the first time ever! We usually must buy them in the city three hours away. Only $1 for four? That is four times cheaper than I paid. But I was so excited to see them I just had to do it. We are doing Mexican Thursday and cannot wait.
  7. Another bad pain day for me so did not get much done in the kitchen. Having the rest of the vichyssoise soup, falafel chips and hummus. Well, at least I made something today! Tomorrow the plan is to have seared duck breast with sour cherry gastrique.
  8. Chicken Thighs Marinated in Garlic Aioli and Roasted with Lemons, Fresh Thyme, Rosemary and Sage Lemon Rice Pilaf Steamed Broccoli with Peppered Almonds Simona's Challah Bread with Merlot Jelly
  9. Found some gorgeous leeks in the store so we are having Vichyssoise (but I am serving it warm, not cold). Maybe drizzle with some pumpkinseed oil and sprinkle with spicy pepitas. Warm challah bread (as per Simona's recipe). Strawberries with balsamic glaze.
  10. Fresh millet and brown rice flour pasta with a rose sauce Roasted plum chutney I made with little golden plums and lactose-free yogurt Cucumbers and red onion salad with lime vinaigrette
  11. Frost is in our forecast for tonight so we will be picking all our vegetables except carrots as they like frost. So, we are having: Big Salad Night - butterhead lettuce, baby beet and arugula leaves, red carrots, juicy tomatoes (several of them weigh over 1 lb each) and fresh herbs with a chipotle vinaigrette I am making with dried toasted and re...
  12. Most definitely! My first few weeks gluten free were quite yucky. I felt sick in general with nausea, vomiting, headaches, intense food cravings, dizzines...and many others experience this, too. Thankfully the good news is that it is temporary. Soon this withdrawal will be forgotten and you will be reaping the benefits of your new diet and life. Glad...
  13. Tonight we are having: Pork Tenderloins with Coffee Cacao Rub and Maple Bourbon Glaze (seared and roasted to medium well as pork SHOULD be) Oven Roasted Baby Potatoes with Roasted Garlic and Rosemary Oil Minted Pea Puree Greens with Julienned Daikon and Grapefruit Tarragon Vinaigrette, Toasted Pecans and Dried Cherries Leftover Chocolate Marquise and...
  14. I, too, add all sorts of yummy things to my crust including Parmesan and all sorts of fresh herbs and roasted garlic. Heck, sometimes I even add caramelized onions or shallots.
  15. Not exciting but tasty... Grilled 1 1/2" Ribeye with Herb Garlic Compound Butter Grilled Baby Potatoes on Rosemary Skewers with Bay Leaves and Roasted Garlic Roasted Baby Beets and Carrots with Orange and Sage Jicama Slaw with Soy Vinaigrette Chocolate Marquise with Hazelnut Chocolate Tuiles (for my husband) - it is utterly decadent and he soooo deserves...
  16. That's awesome, Marilyn! I just love balsamic syrup and use it on all kinds of things - basting quail, drizzling over rib eye, even on ice cream! Also yummy drizzled over grilled or roasted vegetables. I have been unwell lately so have not been cooking, unfortunately, but miss it like mad! Hopefully tomorrow I will be at it again as I have some fabulous...
  17. Although I am definitely not vegetarian, I have made some pretty intriguing spanky vegetarian dishes so I would be interested in a veg thread!
  18. It is chilly today so the following is perfect: Traditional Provencale Daube (takes 48 hours to make but soooooo worth it!) Smashed Potatoes with Chives and Black Garlic (wanted to make Pommes Anna or Dauphinoise but as I cannot have dairy obviously will not work!) Ever-so-slightly Braised Carrot Ribbons with Lemon Vinaigrette Individual Lemon Souffles...
  19. OK - last night I said we were going Provencale today but that will have to wait until tomorrow because the Daube I am making takes 48 hours. So, tonight was: - Seared Brined Pork Tenderloin with Spicy Apricot Glaze - Lemongrass-Infused White Rice - Roasted Red Peppers with Bagna Cauda - Watermelon with Balsamic Tomorrow's meal will be more...
  20. Do you like risotto? An herbed risotto would be lovely with piccata. You could even quickly fry up some capers just until they open and sprinkle on top (the flavour changes - sort of how garlic mellows when roasted). Or if you prefer regular rice perhaps cook it in carrot juice instead of water. Nice flavour and colour. I like to infuse rice water...
  21. You take unpeeled potatoes (Yukon golds are the best due to their starch content), place on a large wooden spoon and slice very thin slices not all the way through. It looks sort of like an accordian. Then you insert yummy things between the slices such as bay leaves, pancetta, slivers of garlic, fresh thyme, etc. then drizzle with olive oil and roast....
  22. In too much pain to cook today but tomorrow we plan to go Provencale. Will post menu in the morning - it is going to be great!

  24. Did not do Friday's yet and it was yummy so worth mentioning (I love cooking for my sister and her family at her house): Seared Marinated Wild Boar with Plum Jus Herbed Braised Flageolet Beans Braised Swiss Chard with Roasted Chanterelles
  25. I'm glad. Lunch can be ho hum at times so it is nice to look at things differently! Oh, man. I am with you on the ice cream. I could polish a pint off quickly, too, but am exercising my new lactose restraints! Plus I am making a huge effort to decrease my cholesterol and incorporate more grains, legumes and so on.
