  2. Aw...that is really sweet of you! Unfortunately I will not be posting for two days as I will be away Thursday and Friday but will be sure to again Saturday! In Autumn when it is cooler (our leaves are actually falling off the trees already) and then in Winter I make yummier heartier meals such as osso bucco. Can't wait! We do not have A/C so I melt...

As the weather has cooled off a bit I am taking advantage of it and am making: Focaccia Spring Pea Soup with Chive Oil (would normally also add a homemade peppered creme fraiche but am making a far healthier choice so am not!) Sauteed Julienned Zucchini with Lemon Mint Vinaigrette I am also making a big batch of marina sauce to have on hand.

  10. Marilyn, you're too kind! I initially completely cut out dairy when I was first diagnosed for nearly three months then reintroduced it and was fine for ages. Then about a month ago started having serious IBS-like symptoms (that I did not get from gluten at all) so my dietitian wants me to start eliminating things. She feels I am consuming too much raw...
  11. You replied to my newbie post on my frustrations with trying to find a decent gluten-free bread, and you said you make your own. Do you have a favorite recipe you can share with me? I've made homemade bread for decades and enjoy making it, but from the few gluten-free recipes I've seen this is a whole new way of making bread! Mixes of flours, xanthan gum, etc.--I'm clueless!

  13. Have you tried the crust from the CIA Baking book? I posted it on here. You actually roll out the dough rather than spread it! One of the very few that I have seen. One of the best I have tried thus far. I posted both a soft dough crust and a crisp dough crust a few weeks ago...
  14. My husband is going out for dinner this evening so I am making myself soft polenta with mushroom ragout, braised Tuscan beans with roasted garlic and rosemary and low fat soft pine nut cookies.
  15. That happened to me once. I was solely catering a dinner event and making a slaw and all the cabbages had that stuff running through them! Improvising forces one to be more creative - I actually quite enjoy it (unless I am catering! ). Sounds as though it turned out well for you anyway!
  16. Oh, you're more than welcome! My mind is so filled with food ideas at any given time it's almost pathetic. I was just told yesterday by my dietitian to cut out dairy for two weeks (I've been having tummy issues now after being gluten-free for six months). So, that is why we pigged out on cheese last night! Tuna melts (or even just tuna salad)...

  18. I love that twice-baked potatoes are so versatile! I also like to add in roasted garlic pulp, creme fraiche, diced pancetta, mushroom duxelles, garlic scapes, aged gruyere or gorgonzola, garlic chives, caramelized shallots or onion garlic jam, good olive oil and maybe some fried capers. The toppings are endless, aren't they? They are so easy to make and...

  20. Simple and rustic... Homemade rosemary focaccia with a baked ooey gooey fontina/garlic/scallion fondue. We'll dip blanched green beans from the garden into the fondue. Shaved zucchini with ricotta and fresh mint and orange thyme vinaigrette.

OK - tonight we are going to Indonesia: Turkey Sate with Spicy Coconut Peanut Butter Sauce Gado Gado (sort of the Indonesian version of potato salad) Rujak Manis (fruit with spicy coconut sugar sauce with ground peanuts) Acar (sort of pickled vegetables) Bawang Goreng (seasoned crispy shallots) Should be good (and fairly busy!).
  22. That's awesome. Many people assume that risotto is tricky to make but it is not! I love that there are hundreds of ways to do it. Very versatile, that little arborio rice!
  23. Your 20-month old has a discerning palate! What type of risotto are you making? I'm making mine with fresh herbs from the garden, white wine and citrus. Either that or Milanese with saffron but I thik I'll stick to the fresh herbs. Man, I love risotto.
