  1. Since my kids left for camp today, I'm lazy with my cooking. I roasted some chicken breasts with basil, lemon and lime. Washed a lot of fruit......made some salad. Do you make anything that is grain free, soy free and corn free that is good?! I'm running out of ideas....
  2. Stir fry chicken with spring onions and basil. Topped with avocado mashed with lemon and lime juice. Eaten with baked kettle potato chips....oh yeah, white wine too! Later a bowl of berries.
  3. Some hard low fat cheddar and fruit to start. Then some sweet and sour chicken stir fry. I'm getting bored with my food lately, time to hit the recipes to find something different. Trying to get thoughts of kettle potato chips out of my head!
  4. Some leftover turkey burgers with fresh chives wrapped with lettuce, pickles and roasted onions....roasted veggies on the side. Fresh fruit. glass of chardonnay or two, it was a very hot day!
  5. I'm cooking some lemon and chive chicken. Not sure what I will do with it. I boiled some eggs, cut some fruit.... It's movie night and I usually treat myself to a gluten-free snack I don't normally eat during the week. I found Kettle brand gluten-free BAKED chips! They are actual potato slices and not some potato corn mixture! Lower in fat and not full...
  6. I plant my favorites! Right now I have a sweet basil growing strong (got plant for $2 at walmart) another basil growing from seeds. From past summers, basil always has grown very well for me. I love it!! I also have dill and lemon thyme growing. I'm hoping to get some chives growing soon. I live in an apartment and grow them in pots along with flowers. BTW...

  12. So, I want to tell off a co worker who has no compassion and has said neg. things about Celiac! She was like "Lays chips are gluten-free"! why aren;'t you eating them everyday! Well because that's junk food!!! Almost lost my religion! She acted like I should be so happy I can eat plain lays chips!! URGHJ!

  13. How about meatballs with your ground meat? You can spice them up several ways! Eat with the veggies grilled?? Can you eat quinoa? that would go good with a stir fry. Glutenfreegoddess has several tastey recipes for quinoa. I often pound my chicken breast thin and stuff them with herbs and veggies I like. I lay the chicken out put the herbs and veggies on...
  14. Chicken baked in parchment paper (my new fav way to bake) THANKS! With fresh basil, fresh lemon thyme, lemon juice and veggies. Fruit salad with strawberries, blackberries, grapes and fresh pineapple.

  16. Endo scheduled for July...still having some painful days...my gastro said I had severe damage...that I had silent celiac for many years to have this damage....time..time...is my friend..hoping in time I can heal

      Did you any symptoms of celiac disease before getting the diagnosis? I'm sorry you are still feeling pain. I have been gluten-free for two-three weeks now and still feeling tired, depressed at times, headaches and fat; on the good side (LOL), they are slowly dissipating with time. The weight is slowly coming off. I hope you do get better.

      I had some slight symptoms for years. Reflux, migraines, tummy problems. I started having diarrhea and more fatty stools, I lost a lot of weight, and then in Nov 08 I started having intense abdominal pain. It spread to side pain, so bad I ended up in the ER. I also had abdominal distention plus what I know know to be brain fog. I went through 7 months of doctors and many meds and testing to it to come down to a blood test and endo.   17. Tonight I'm trying something new! fish in parchment paper with some fresh herbs(dill and chives) and lemon. I added some veggies on top of the fish, it's baking now. I also did one with a chicken breast, lemon thyme, basil and veggies for lunch tomorrow. Throw in a side salad and a bowl of strawberries.

  22. I drink alot of water plus add in MiraLAX twice daily per my gastro to water. I also eat two big portions of fruit that I tolerate well everyday. Plus lot's of veggies and whole foods. Prunes are good, but I cannot do them well. Yogurt with live cultures are good too. (I cannot eat at this time, hope to soon) I don't eat a lot of graines, preservatives,or...
  23. When I eat it, it is boiled eggs, scrambled eggs and fruit. I try to eat as whole foods/ grain free as possible.
  24. Same boring food on my low oxalate gluten-free whole foods short list. baked fish, peas, mushrooms cabbage : ( I have to add it makes me feel better, but I feel I have no taste! Any help???
