  1. No worries, gilr!!1 I love that you are so passionate about it!! I and many others here learn alot from your posts!!! I wish I could put more time into cooking myself, but i can't, so I am more than happy to learn from those like you who are able to!
  2. I can't remember if the items/ recipes I suggested are both casein and egg free-- I'd have to look. But if they are, or can be adapted to be, they should work for you. I, too have struggled with gluten-free baking (and I don't have the limitations you do), and the cornbread i've made is one of the few things that has seemed to turn out well!
  3. i know . But being a spousal caregiver living on a fixed income, i don't always have the time, energy, or means to do things like this. And the times that I attempted onion rings or fried chicken pre- gluten-free didn't come out too well. Plus, the OP was a chef asking for ideas of things to make gluten-free in a restruant- type setting, i was also thinking...
  4. Oh, boy, do I hear ya about the pizza 'bones'!! as far as cornbread.... Gluten Free Pantry and Bob's Red Mill both have pretty good cornbread mixes. i used both of those last year over the holidays, and my cornbread loving- husband couldn't tell they were gluten-free!

Our local church cannery has apples and pears for a really good price, so I am hoping to get some today to can... this will be my first time canning anything.... even went out and bought the Mason Jars earlier this week, as I didn't have any. My only question is this: does anyone know of a website I can go to that has a tutorial for canning apples or pears...
  7. mmmm.... that sounds good!!!! i had never even heard of delicata squash until a couple of days ago... it was being used on a cooking show I was watching, or something like that.... then when i went to Walmart Monday night, they had some, but I didn't get one.... maybe next time I'll have to get one so i can try it!

  11. I hope your husband's PA realizes that in general, Celiac isn't found via Colonoscopy!! I was diagnosed with hypothyroidism about 8 1/2 years ago... had had symptoms for about a year before I was diagnosed. I, too had constipation. Had to take a fiber supplement daily. I have been gluten- free one year and two months now, and in these last two months...
  12. can you eat yogurt (gluten free yogurt, of course. No Activia, as it's very likely cross- contaminated!)? (Or just take a gluten-free probiotic?) I find that the probiotics in yogurt seem to due wonders for my constipation. Or try a gluten free fiber supplement apples-- with the skin on (that's where the fiber is) are also a good source of fiber...

  15. i get a rash on my fingers that looks a lot like yours--- even pretty much in the same place! Except I also get it on the inside of my thumb. Mine isn't as bad as yours though, and doesn't usually hurt, and has only been itchy like one time. It does seem to ebb and flow, so to speak, but I've had it for years.   16. I am self- diagnosed, so don't know if i have celiac or NCGI. The obvious outward sypmtoms I had were, well, not so obvious-- at least until i figured out my gluten issues! they were: cold sores, non itchy rash on arms & hands, constipation, minor ataxia. All but the ataxia can be attributed to other things, as far as I know. And I just thought all...
  17. My reaction to fructose is totally different than my reaction to gluten. My noticable reactions to gluten are minor... my reactions to fructose are more noticeable, and more immedate (hours, where as my one main gluten reaction-- cold sores-- usually takes 1-4 days to appear)
  18. At just over 1 year gluten-free, I am thankful that: I can eat dairy with no problem. I almost never have cold sores any more. The rashes on my arms and hands are almost completely gone, especially during the summer sun exposure time... (not DH, I believe, but most defniately gluten related!).   19. I wouldn't be able to sleep without it, either! I started taking it in April, and it has been a godsend! I usually only need to take 1/4 or 1/2 of a 1 mg pill each night. My cue that I'm taking too little is waking up during the night... the next night i will up my dose. My cue that I'm taking too much is, like others described, feeling extremely groggy...

  22. my husband has several life- long disabilities... I sooo hear what you're saying!!!! on a lighter note, one thing I like about being gluten- free is that I get the whole box of KinniToos or KinniKritters!! And any larabars or Kind bars we buy are mine, too!!
  23. Rudi's cinnamon rasin bread, toasted w/ PB, yogurt, and fried egg with cheese.... considering the fact that I was sicker than a dog yesterdday w/ flu- like symptoms yesterday (and could barely eat anything) I'm happy to be able to eat anything today!

I rarely buy meat form Kroger (I can find it cheaper other places) I have no problem with their yogurt, I get it when it's on sale, and have no problems. however, the one time I got some of thier ice cream... June of this year... the ice cream i got had no gluten ingredients, however I deifnately had a reaction to itand i don't have major reactions...
