  1. last night we had a mexican (chuck it together lolz) casserole - i am digging the tortillaland fresh corn tortillas. they say to just 'dry fry' them, but frying them in oil is soooo much better. so, tortillas for the 'crust', refried beans, chicken, salsa, cheese, ta daaaa! and we had lettuce, sour cream & avocado on the side.
  2. last night - pan seared ahi tuna w/zucchini/yellowsquash/carrot/broccoli slaw w/ginger&sesame dressing - with a couple of sea scallops, pan seared as well. i marinated the tuna & scallops in garlic&ginger teriyaki. and sticky rice <love that damb rice cooker!! it's been every man for himself as far as dinner has been around here the...
  3. we are going to try mushroom/bacon/swissburger impossible pie next time (sounds suspiciously like quiche, so don't tell the hubs lolz) we had chili in a REGULAR POT pshaw i'm a rebel, i know - but i'm giving in to kfg crockpot tomorrow night to make swedish pot roast. i have rubbed my venison with the appropriate spices and it's getting happy overnight...
  4. it's funny, because when i was first dx'd, everyone who didn't know much about celiac thought i had to eat a vegetarian diet. i was like: noooooo....... ? i had a 'not ideal' reaction to mayonnaise, (not anaphylaxic, though, ugh that must be terrible!) turns out i had a sensitivity to soy. and, some people are sensitive to veggies in the night shade...
  5. nicole is right it's hard to pinpoint when you are sick all the time! give your diet time, keep a food journal (makes it easier to figure out what is bothering you/what you've eaten and when) i had trouble with raw foods in the beginning - until i started healing - and it took a long time to get some things 'back' - had to remove dairy for about 6 months...

  8. last night, we made cajun spiced fried shrimp with mango salsa, rice, and cole slaw <from garden cabbage. saturday, i had bought some boudin but i had no clue what to do with it. so, i made creole rice and stuffed peppers with creole rice, boudin, (boodan lolz how the heck do ya spell it) and jack cheeze. it was super yum. the hubs woofed it down...
  9. last night we had chicken stew (sort of chicken n dumplins) boneless chicken thighs, (bacon LOLZ), onion, celery, carrot, fresh herbs (i put them into a tea ball, that way the flavor goes in and i don't have all wilty herbs in the finished product) and gnocchi instead of the dumplins. i has a cold so, that was pretty close to chicken soup..........

  13. i make zucchini lasagne that is delicious and easy - just make like you would 'normally' make lasagne except sub zucchini sliced thin lengthwise for noodles. it takes longer to cook, depending on how soft you like your 'noodles'

  18. i made blueberry muffins with the ka muffin mix - they were yums - had to hide them from the kids! i froze half of them i have a friend who is a (cheating) celiac, but his wife cooks and bakes for him gluten free. she is my guinea pig, now whenever i make something i think is great and delicious, i make extra for her to try. she goes to costco...

  24. ah, yes, this diet gives me a legit excuse to play with my food. which i love sometimes, i mix yogurt, almond butter, chex mix, honey, and pecans (plus sometimes chocolate chips) and eat it as a snack - it's really UGLY but delicious. plus, good for gaining weight
