my 2 cents - many of us had a terrible time getting diagnosed. if you have a celiac dx that you didn't hafta fight tooth and nail for, take it at face value. i still have encountered some doctors who doubt that celiac is serious. which it is. and, yikes! i wouldn't want to spend any more $$ on a second opinion.... your numbers support a celiac diagnosis... -

yes, definitely try cooking your veggies/fruits. in the beginning, I could not eat raw veggies but cooked were ok. after a while, I could eat raw things. also, pay attention to your fructose intake - I had issues with fruits for a bit. now, I can eat almost anything except gluten. it takes TIME, too, so don't forget to take it easy on yourself. i'm...

keep a food journal. many foods are probably going to cause you discomfort to digest for awhile. what did knitty kitty call it? a "mood, food, poo'd" journal - what did ya eat, how did ya feel, how was the level of discomfort/digestion. that will help you to eliminate some foods for a while until you heal up some and your villi get healthy. once you...

yes, I have experienced this - didn't realize I was compensating for my memory by tricking myself - like: when I see this, i'm going to remember to bring the post office keys when I go out. I still do it, but not as much. writing stuff down helps, too. lists help also, as long as you remember to take it with you!! lolz -

for me, personally, I just eat whatever i'm hungry for. sometimes, just gluten-free toast or something light, a little tea. or, sometimes, after i'm done feeling icky, i'll eat a huge meal. that being said, I've been on gluten free diet for 10 years. your guts might be more sensitive if you're just starting this journey. fyi - my blood test was negative... -
