  1. false negatives are more common than false positives.
  2. i'm with frieze - an undiagnosed celiac is a medical industry's GOLD MINE..... i suspect that is why it's so hard to get a firm diagnosis. alllllll those lovely symptoms that they cannot make a zillion dollars on when you get diagnosed. i recently had a doctor say i probably don't have it, then i said "i don't care. it'll never be a pre-existing condition...
  3. you might want to look at nuts.com - they have a pretty decent selection of treats in their gluten-free section. i can't recall cherries, but if ya like walnuts, they have these maple mesquite pod walnuts that i can't stop eating. they're not gonna make it till Christmas lolz
  4. you probably shouldn't be breathing all that flour if you have celiac (i wouldn't - even if it didn't make me physically ill, just the thought would lolz) from what i understand, you can have the gene and some people never develop the disease. but it can be triggered by a number of things, including traumatic events, extreme illness, pregnancy/childbirth...
  5. amen to this - show of hands of who found this out the HARD WAY...? this past thanksgiving, i did everything gluten-free - finally perfected my mom's stuffing, brined my bird, found gluten-free fried onions for that green bean casserole that i don't even like (lolz - everybody: suffer! hahahahaaa) and outlawed those crescent rolls. nobody died! everybody...
  6. food journal, as others have suggested, is the way to go. also, i had a problem with eating something one day and it would digest well, then eat the same exact thing the next day and it would be terrible. i started to rotate my meals ( not eating the same thing(s) as the day before and i have been able to add back many many foods that i could not digest...
  7. i have been gluten-free for about 10 years now and have finally FINALLY rounded the corner to where my villi are absorbing on a regular basis. it took a whole lot of experimenting with digestive enzymes, probiotics, vitamins, etc, etc, etc.... now, lucky me, my b is good, my d is good <without supplements, which i was taking 50,000 iu 3x per week) NOW...
  8. when i went COMPLETELY gluten free, i experienced gluten withdrawal. it took several months to feel better and what you're saying about eating like crazy: if your body is deprived of nutrients and it finally feels better when digesting, you're gonna be hungry. gluten will affect your mental state as well. when i accidentally get 'glutened' i will...
  9. you could keep a small area for your child that is off limits to gluten eaters if you are worried about sterilizing your kitchen. i make visitors (my grandkids) wash their little handzies after gluten snacks bc i while my kitchen is MOSTLY gluten free, i still keep gluten snacks for the little heathens! while i agree with karen and your child deserves...
  10. yeast is gluten free. cross reaction is a myth.
  11. this is a very old thread, so i don't know that the op's will answer. i'm sure you could go on the wendy's website and either look at the ingredients or their allergen list.
  12. just use the peel and stick ones. i lick nothing that doesn't list ingredients.
  13. yep, the lovely autoimmune gene. my son got dx of type 1 diabetes at age 19, daughter got dx of r.a. at age 12. pregnancy/childbirth was my trigger, as well. i had no idea what celiac disease even *was* until the doc suggested i go gluten free. of course, that made the blood tests negative, but g.i. doc told me to continue. they are still reluctant...
  14. add an egg or a little more xanthan gum (i'm assuming the namaste flour has some in it) for pasta i just use gluten-free flour that has xanthan gum already in it or i will add some, an egg and just enough water that it holds together in a ball in the food processor. good luck!
  15. try rotating your diet every 3 days. if you have trouble with histamines/allergies, (on top of celiac) it might help to not overload certain histamines. i couldn't figure out why i would eat something and be fine one day, eat the exact same thing the next day and my body went: nope. so, it works for me and i was able to add in many foods i had eliminated...
  16. i had 'withdrawal' symptoms when i first started strictly gluten free. i drank lots of water, took hot showers and rest, rest rest. can you take benedryl until your itch clears up? i still avoid iodine (bc if it's dh, iodine can aggravate it) so, lay off the fish and switch to uniodized salt for awhile, maybe that will help. where's squirmy? she...
  17. haha the first paragraph is incorrect: celiac is *not* an allergy to gluten. it's an autoimmune disease. so, then i had to not read the rest lolz
  18. for me it's 24-48 hours (starts with That Headache) then it lasts for 14 days. you are new, you might want to try keeping a food journal to figure out if anything else is irritating your guts. it's a good idea to skip dairy products for awhile until you heal some. the ends of your (possibly damaged villi) is where the enzyme is produced that breaks down...
  19. deep breaths! every one of us has been where you are. this is a good place to vent and ask questions once you have been gluten free for awhile, you should see other symptoms (seemingly unrelated) go away. this disease is a chameleon - i personally had migraines/ headaches/ joint pain/ fatigue/ dh skin rash etc along with the lovely big D and all the...
  20. i buy ground meat at the butcher. it's a small shop. they know i have to be gluten free. everything is clean and they even change their gloves between different proteins (ie:they won't touch the pork chops with the gloves they just touched chicken with) meat grinder only grinds meat and they clean it between batches. my daughter works in the deli...
  21. tate's are my favorite! i'd be looking at the soy lecithin/chocolate or eggs or dairy if you had cookies with milk. you might want to keep a food journal to figure out what other foods are a problem right now until you heal up a bit. many of us had to remove some other foods for awhile. i have gotten to add almost everything back into my diet. still...
  22. are you eating them every day? i thought i couldn't handle blueberries, but it turns out that i can eat them if i don't overdo it and if i don't eat them every day. i have frozen berries from kroger and i eat them in my cereal every third day or so. idk why fruit packers would have wheat..... (but they were labeled gluten free on those little purple squares...
  23. i looooove nuts.com. i've already ordered all my nuts, etc, for holiday baking from them. if you order (i think it's 65 bucks) enough, you get free shipping. the nuts are so pretty, not all busted up and stuff. they send you a little sample with your order (this time it was goji berries) also, i got pepitas and sweet rice flour. they have added alot...
  24. if you have celiac and you eat gluten, you will feel terrible and do damage to your body. there isn't any 'morning after' (for lack of a better term) tried and true remedy. if i am accidently glutened (and i am insanely careful, so this does not happen often anymore) i find that drinking plenty of water and long, hot showers make me feel better, but it...
