  2. Last night we had grilled salmon marinated in fresh grapefruit juice, roast sweet pototos and grilled asparagus with chocolate for dessert. Tonight we had pinto bean and bacon soup with mini grilled sirloin burgers and salad.

  4. Due to circumstances beyond my control (a neighbor stopped by and lingered forever), we had to have a microwave meal tonight. It was nachos made with thick corn chips and leftovers from superbowl Sunday (gluten-free chili, pulled pork), grated cheddar and asiago cheese and some salsa with sour cream. We loved them!

  7. I haven't had blue cheese in over a year and a half because I'd read the cheese like stilton, gorgonzola and blue cheese could contain gluten if the mold for the cheese was produced from wheat.   10. I popped into a Brazillian food store yesterday to see if I could buy tapioca flour. They had it in 5 lb. bags, sweet or unsweet.   11. We had little sirloin bergers on toasted Chebe cheese rolls, with green beans and horseradish pickles. Dessert was little scoops of Chocolate gelato with fresh sliced strawberries on top.

  18. We had steamed garlic mussles and roasted stuffed peppers. This time I stuffed red and pablano peppers with sauted onion, ground pork, rice, tomato paste, a couple of cheeses, and seasonings and baked them at 400 degrees for about 40 minutes.   21. Smoked St. Louis style ribs, black eyed peas and rice. I threw some roasted garlic, poblano and red peppers in with the black eyed peas along with cumin and mustard seed, tumeric and fresh thyme and they were the best! Happy New Year!
