    ALBANY, N.Y. - Amid the aisles of spaghetti and canned peas, cereals and breads made with mysterious-sounding grains like amaranth and quinoa are sprouting up at major supermarkets.

    Wheat is still king of this country’s whole grains, but the appearance of such alternatives indicates consumers are beginning to expand a niche market once relegated to the obscure corners of health food stores.

    “People are realizing there’s a benefit to eating a diversity of grains — and these grains have some incredible nutritional properties,” said Carole Fenster, an author of numerous cookbooks that incorporate wheat-free grains.

    New federal guidelines recommending three servings of whole grains a day have put a spotlight on wheat, but exposure to barley, brown rice and other options has also grown, said Alice Lichtenstein, chair of the nutrition committee at the American Heart Association.

    According to the marketing information company ACNielsen, sales of products with whole grain claims on their packages for the year ending April 22 increased 9.5 percent from the previous year.

    Wheat free grains skyrocket

    NuWorld Amaranth, one of the country’s main buyers of amaranth, reported a 300 percent increase in sales in the past three years. Bob’s Red Mill, which sells alternative wheat-free grains, saw a 25 percent increase in sales in the past year, with quinoa driving the bulk of the growth.

    Amaranth, grown for millennia by the Aztecs, has twice as much iron as wheat and is higher in protein and fiber. Quinoa, an ancient Andean crop, has less fiber but more protein and iron than wheat.

    It may take some time for the unfamiliar grains to find broad acceptance. The American palate is still adjusting to whole wheat, and amaranth’s distinct, slightly nutty taste could take some getting used to.

    Gluten-caused celiac disease

    One reason for the fledgling demand is a growing awareness of celiac disease, which is triggered by gluten, the protein found in wheat. Symptoms range from severe cramping to chronic fatigue and even organ disorders. The condition is believed to affect about 2 million Americans, with others sensitive to the protein.

    There is also a growing crossover market of health-conscious shoppers in search of the most nutritious grains, said Diane Walters, spokeswoman for NuWorld.

    ConAgra Mills is working with farmers to expand the supply of sustagrain, a type of barley with a 30 percent fiber content, said Don Brown, vice president of business development at the company.

    While products made entirely of amaranth and quinoa may not hit the mainstream anytime soon, the demand for such grains as ingredients will likely get a boost as multigrain products proliferate, said Robert Myers, executive director of the Thomas Jefferson Agricultural Institute, a research center in Columbus, Mo.

    “Once they get past corn, wheat and oats, they’ll eventually get around to picking up grains like amaranth,” he said.

    A limited supply

    Alternative grains also benefit from the popularity of organic goods, Fenster said — Whole Foods even has a line of bakery goods devoted to gluten-free diets.

    “As people go into those stores, they can’t help but notice those products,” she said.

    Supply of some alternative grains is still limited, however. Estimates of U.S. farmland devoted to amaranth, for example, range from 1,000 acres to 3,000 acres — compared with 50 million acres for wheat, according to the Thomas Jefferson Institute.

    But the supply of white wheat in the country was also limited until Sara Lee recently launched its white wheat bread, said Cynthia Harriman, director of food and nutrition at the Whole Grains Council. To ensure adequate supply, ConAgra began contracting with farmers about five years before the product launch.

    The same thing could happen for other grains that are easy and inexpensive to grow, Myers said.

  2. Well, with each passing day I find more an more things that I have thought were safe and I find they are poisoning us.

    I called 1-866-844-2797 besides being left on hold for 30 minutes a woman came on that wasn't as nice as I had expected. I asked about the ingredients, and she said I can read you the label. I said I can do that, I ask her to explain to me what the words all ment.

    I explained I had food allergies and be came reactive when using their product.

    She told me that GlaxoSmithKline can NOT guarantee it does not contain GLUTEN, CORN or SOY.

    BEWARE OF SENSODYNE TOOTHPASTE!

    I explained how we (Celiac) consumers have started a grass roots movement for change. And how I will post these new finding for millions to read. I shamed them being a drug company and putting ingredients in the products that make us sick. I brought up the fact of the Mc Donald's suit how the company lied to the consumers, and how more companies should explect more suits. And how we are also going to fight to get drug labeling laws so we know what the drug companies are poising us with.

    She didn't want to listen and said "I got your point I have to hang up now."

  3. My fiance says he believes that the gluten intolerance is all in my head. -- He also thinks I should go to a holistic MD to get a medication that would allow me to eat gluten. I try to explain to him that this doesn't exist, but he says it must and I just don't know about it.

    The main issue is that he has grown tired of me having to ask questions at restaurants. We eat out almost every meal. When I ask more than one question, he gets embarrased, annoyed and sometimes angry. He tells me it seems like I am an old lady when I do this. I feel that he is causing me to get glutened at times because I feel discouraged in asking enough questions to assure that my meal will be safe for me. I feel unsupported.

    Mr. Knucklehead Fiance is in for an eye opener when he finds out celiac disease kills.

    My NEXT HUBBY is going to be a GASTROENTEROLOGIST. Don't laugh - I really mean it. So he can grown old listening to me ask questions at restaurants just to punish him and his buddies until they do something about celiac disease. I will torture him, it will be easy.

    I was going to suggest making him go w/ you into the bathroom... but you don't seem to have the molten acid volcanic explosions I have when I am glutened. THAT would make anyone believe that celiac ain't in my head!!

    The smell or foul stench of steatorrhea diarrhea is enough to make someone a believer. :ph34r: But does Mr. Knucklehead Fiance have the guts to really L-O-V-E a celiac? :o

  4. I did some home work on the medication you are on, and might be the cause of some of your side effects. It has Corn, Dairy & Legumes (soy family). For many Celiac's we develop multiple secondary food allergies, and these three are the top three to avoid. Many of us have found if you take thyroid medication and have celiac disease we tend to want to avoid SOY. A compound RX can make fee of the allergens causing a problem.

    Hairloss is cause by my thyroid, for me. It took about 3 months before it stopped. And when it starts again, I know it SOY does it. And it also causes me to have a loose stool.

    Look at the billions spent every year on di·ar·rhe·a -- what does it tell us. They want us to be sick and keep coming back. They'll learn when someone sues then like the families did to Mc Donalds for being liars about what was really in the product.

    This is why many of us are getting sicker, and not better unknowingly -talking Imodium.

    I'm upset and can't get over it - how we trust them, and they are making it worse.

    My experience this time has been with the clear cherry/mint liquid Imodium. I took some Imodium because of a loose stool about 2 TBS in the little cap cup. I noticed within 30 minutes, for me I had the awful smell of steatorrhea (diarrhea) that is how I know I have had wheat gluten in my system. Then within minutes I had the rash of celiac DH, all over my torso, it iched and didn't go away for days it was so bad I changed my body soap. The Imodium worked and bound me up. But the rash I questioned myself on it. I keep a food/body journal and I write eveything down and retraced it to that. So, another set back in my recovery... now I know better!

    PILLS IMODIUM - CONTAINS CORN. That was as far as I got. I didn't ask about SOY I was so upset.

    I used my time with her educating her on the simple things important to know. And, I went deeper in hopes my converstation was recorded and logged into the "EARS". I asked her to write down a title of a book, that the brains in their labs should read called "DANGEROUS GRAINS..." I told her of a large grass roots movement happening around the USA of people with celiac disease, their families and friends to provoke change and awareness to big business, drug companies and our government.

    And how we are going to demand ingredient labels like on food, but for drugs, beauty products, skin care and everything else... just like us not knowing IMODIUM LIQUID has GLUTEN in it.

    I spoke to her about how millions and millions of people with celiac disease rely on Imodium, and how we have believe their product to be a safe drug to use with celiac disease when in fact they are making us sick(er).

    Think about this long and hard.

    Think of the impact this has had on our health.

    Tomorrow I'm going to call my compound RX guy and ask if he can make it, caps or liquid without the poison in IMODIUM. Or what else we can take?

  9. As usual, what's harmful to one might be healthy for another. Soy can be dangerous to some, healthy or even beneficial for others.

    NOT what the Celiac brains (the docs and those in the know) are saying.... all the newly published autoimmune disease books all say stay-away from soy. 5 - 6 years ago I drank plenty of Silkmilk not knowing what I was doing to my body.

    I only say this because I CARE. I wish there was information that addressed SOY & celiac disease back 6 years ago when celiac disease attacked my body. I know the disease wouldn't have been so rapid on its progression, if I had avoided soy. I didn't see, feel, or know what my body was telling me. I must admit I didn't know how to "READ" my body, at tthe time. Now I know different.

    PLEASE Read Dangerous Grains (it is the most important thing you can do in your recovery) and you will get a better understanding of celiac disease and the secondary food allergies (we will all end up getting them. It just a matter of time.) It will change the way you think about living with celiac disease and the important steps to take.

  10. I'm so troubled by this...

    Think about it. Imodium is for many of us what we believe as a life saver. I have trusted them for the last 10-years of my life, and now I find out I'm making myself sicker not knowing. We must stop the madness these big companies are causing us!

    This could be the reason we don't get better or we think we do until a relaps...

    This is all the more reason why we need to get ingredient labeling on everything! Anything over the counter, Imodium, toothpaste, cosmetics, skin care, the dyes in our pillls, the list goes on.

    The woman was very very nice I spoke with, and told me that CORN is what they use as a binder in the pills. And corn is also used in the liquid too.

    So for us celiacs that are at the stage of the disease with seconary food allergies to CORN. (Don't kid yourself -We all over time will develop them. It's a fact.) This product although we think it is helping us, we might be doing more unseen damage to our body with the corn.

    AND The liquid had GLUTEN! BEWARE!!!
