About Me

Alright well some things about me. I live a pretty active life, I tend to book my days a little too full.

A couple months ago out of the blue I had to have emergency Gallbladder removal surgery. It was awful I've been super healthy most of my life (outside of some bone breaks and other stress injuries from my active lifestyle). Was rushed the ER in the hospital for a week, liver and kidneys in failure, it was horrible. I thought after surgery that my life would resume back to normal with my regular high energy. That has not been the case. Although thankfully I had no permanent damage done to either my liver or my kidneys, I still have been violently ill since my surgery.

I have been trying to follow the diet gave to me by the Doctors, but it seemed to make no difference if I ate what I wanted or ate per the diet either way I've been awfully sick. (And of course my Dr. was on a 6 week vacation during all of this) Finally got into see her this week. She is very sure that I have Celiac or at the least a gluten intolerance. My niece was diagnosed with Celiac 3 years ago, my other niece has a gluten intolerance. So I have some experience with the disease but not much. I guess on the plus side I can cook and have been coming up with recipes and cooking special dishes for the girls for three years now.

I'm desperately hoping now that my energy level will bounce back, but I'm not holding my breath.

Outside of this, I have no children of my own. I do own one dog (who is as close to perfect as they get!) one cat (who thinks she is a dog) and one horse (who is feeling awfully neglected now that I'm not in the saddle for 4 hours a day) I love my animals I like to hope I'm not one of those crazy cat ladies but you know sometimes I got to wonder with as much time and attention I give my critters...I'm not crossing my fingers.

I do a lot of volunteer work. Strongly believe in giving back to better our community

I apprenticed under an amazing chef for a while and had a blast learning about all different kinds of cooking and food. Now I spend a great deal of time experimenting in the kitchen with different flavors. I have dinner parties about every month to every other month for my friends guess I'll be making those gluten free now damn! Interesting challenge to see if I can do it without people knowing...will give this a try and blog about it.

My computer illiteracy is hurting my head...I'm not even sure if I'm blogging on my own blog or I'm making a comment on my blog as myself right now...oh well, I'm not exactly dumb I just have a life outside of my computer and have never bothered to figure it out. Yesterday I spent the day freeing my house of Gluten. This was particularly hard for me...
