  1. Just wanted to add, if you're using a Mac you can take two types of screenshots: Shift-Cmd-3 will take a screenshot of your whole screen and save it to your desktop. Shift-cmd-4 will take a screenshot of an area that you select on your screen, and then save it to your desktop. Since image attachments don't seem to be working correctly on the forums, you can use a hosting service like http://tinypic.com/ or http://imageshack.us/ to upload them.

    They've admitted that it's not safe for Celiacs, and personally I wouldn't suggest that people with wheat allergies or gluten intolerance try it either. Honestly, I feel like they are exploiting the gluten-free diet fad that's getting a lot of publicity right now (Miley, Kim) and possibly trying to tap into the primal/paleo market as well. I guess some people will be happy with the product, but I know I certainly won't be trying it.

  3. For lunch today I had two yellow squash sauteed with bacon. That was tasty!

    Last night I made a berry crisp using two bags of frozen mixed berries from trader joe's, tossing them in some gluten-free flour mix, then mixing together 1c of gluten-free flour mix with 1/2c sugar & 1/2c butter, some walnuts & some spices and then using that on top of the berries. Yum.

  4. Tonight I made a basic meatsauce to go on top of TJ's rice pasta. Tasty & easy! Basically I put a whole onion in the food processor and sauteed it with 1lb of TJ's ground beef until it browned, added a can of tomato sauce and a small can of tomato paste, a cup of water, tsp sugar, tsp salt, and various dried herbs. I had one serving and my boyfriend inhaled the rest :o

    Today I also turned the rest of my crockpot chicken into chicken noodle soup buy adding in some more water, chicken stock, straining out the glop, shredding up the bits of chicken and cutting up the chunks of potato and carrots. Also added some more herbs and a squeeze of honey. Very comforting!

    That sounds delish! I've never heard of Irish Davy Boy's though. I'll have to keep my eyes open for it!

    My crockpot chicken turned out pretty well - but turned into more of a soup there was so much liquid! And I barely added any in the beginning, maybe 1/4thcup of oj and 1 orange squeezed. The meat was very tender though. Maybe I'll just add some noodles and call it chicken noodle soup :P

    Tonight I am using my crockpot again, I love that thing! I'm cooking a whole chicken in there (though I bought it already in pieces). I'm following this recipe http://allrecipes.com//Recipe/baked-slow-cooker-chicken/Detail.aspx but I added in some potatos and carrots at the bottom.. just realized now I forgot onions, oops.. then I added butter to the top, freshly squeezed juice of an orange and I also tossed in what was left of the orange itself, a drizzle of honey, extra paprika. I have no idea if it will taste good or not.

    I'm making it in a crockpot - I didn't have any red wine so instead I used 1/4c beef stock 1/4c sherry and I added 1 tsp cinnamon as one commenter suggested (I love cinnamon!). This is my first pot roast ever so we'll see how it turns out! I also plan to add carrots and new potatoes in the last hour.

  8. Well the Tinkyada pasta was a hit! It tasted really good and my bf said it tasted just like regular pasta. Yay! Gluten-Free chicken meatballs from TJ's was good also. I improv'd a dessert as well - chopped up two green apples, put them in 2 ramekins, topped with cinnamon, b.sugar, and a pad of butter. Put them in my toaster oven at 350 while the pasta was cooking and left them going while we ate, then took them out when we wanted them. Nice lazy dessert :P

I thought it might be fun if we had a thread where we shared what we're cooking up for dinner:) I am not an experienced cook so coming up with gluten free menus for me and my boyfriend feels like a challenge. It's also weird since I only started eating meat since my diagnosis, so I have 0 experience preparing meat.

    Tonight I'm going to try that Tinkyada spiral pasta with some gluten-free pasta sauce and gluten-free meatballs I got from TJ's.
