There is a Dr Fine in some Gastrointestinal Institute down in Texas. He has developed a 100% effective test for Celiac. No false positives, etc. I believe him to be the best authority on Celiac in the Western U S. His test costs nearly $1000 and as of some 8 years ago the test wasn't covered by medical insurance. NO pizza place is gluten free for Celiacs! They would have to have a huge exhaust fan over there non gluten prep areas. A Celiac cannot be in a room where flour has been tossed for 2 hrs.
