1 Head of romaine lettuce; leaves separated
Protein of choice ( I prefer pork or chicken)
1 "nest" Bean Thread Vermicelli (Rooster Brand)
Snow Peas
Red Peppers
Carrots
1 TBLSP Natural Peanut Butter
1 TBLSP gluten-free Sweet Chili Sauce
1 crushed garlic clove
Cut and cook protein; put in refrigerator until cool. Boil 1 nest of bean thread and put aside to cool. (one nest is enough for 2 people!)
Julienne vegetables.
For the sauce combine peanut butter, sweet chili sauce and garlic.
Wrap everything in the lettuce leaves and dip in sauce!

As well as not being able to eat gluten, I also have a sensitivity to corn, rice and potatoes. Does anyone have some dessert recipes that they might have that don't have any of those ingredients in it? Thanks!
Frustrating Results!

My doctor has done two blood test to test for Celiac, HOWEVER, I wasn't eating gluten when these tests where taken and he doesn't want to do anymore tests as he thinks I have it for sure. My aunt (and possibly one uncle, waiting to hear back on that) have it. I am just frustrated that he won't do the tests again. I for sure feel 100% better compared to what I did off of gluten but would've liked to know for sure.
Any opinions?
