  1. He is texture challenged. Also, after he was diagnosed with diabetes when he was a kid he was coddled by his mother. If he didn't want to eat something, his mother would immediately give him whatever he wanted. It drives me up a wall so much that I could just slap her thinking about it. Thankfully, if I put him in front of fresh carrots, he'll eat them mindlessly...
  2. That's so exciting that you got out! Hopefully it is just the beginning of a great new year of being well. Apparently my husband doesn't like risotto or chicken piccata. Whatever, more for me! I can have risotto cakes for breakfast. (That's a breakfast food right?) And I can make those stuffed ball thingers for later. It makes my mouth water just thinking...
  3. I thought I'd share a little food porn. It's been a while since any of us did and I'm super proud of myself because my dinner was AMAZING! I was getting scared because the rice was tasting okay, but not awesome as I was checking it for doneness but once it was all together I almost died of pleasure. I've never made anything so good in my life. Irish, you...
  4. Until my reminder on my phone went off yesterday afternoon at 2, I had totally forgotten that I had an appointment this afternoon for my eyes that my neuro was making me do. A dilated eye exam, fun times! Dinner is going to be a bit later than I anticipated because I need to be able to take off these really sexy disposable dark glasses to be able to see in...
  5. I do that stupid low histamine thing too. And low tyramine, if I like being sighted in both eyes. Thank god that a fair amount of both of those lists overlap. And that chocolate doesn't seem to set me off too badly as long as I don't have too much. I don't get nearly enough cheese in my diet though to make me happy. Every time I think about trying the...
  6. Thanks! I'm going to make my cake tonight so I can have it for breakfast. Because why not! I suppose it's technically a double birthday since I went gluten-free two days after my birthday. I think that means I get to eat twice as much cake and the calories don't count. We're waiting til Monday to make Chicken Piccata and risotto for dinner. And I...
  7. You always make everything sound good. My enchiladas turned out good. My husband is not impressed, so he's ordering pizza. I had an email to get free stuff with my next pizza order for my birthday (lol) so he's getting extra crap he doesn't need. And I guess he'll keep off my enchiladas and I'll have a good stock of freezer meals. Also, my super...
  8. My husband got a turkey for me at a really good after Christmas price, so I cooked that Wednesday. Tonight I'm making turkey enchiladas. It's my first time, so I'm hoping it turns out as awesome as planned. One of my favorite local stores apparently got way more Rudi's stuffing than they could sell. Probably had something to do with the $8 price tag....
  9. I'm sure the celebrating has started some places. Happy New Year to everyone! I think I'm going to find a dark hole to crawl into for a pre-celebration nap.
  10. We actually managed our sweet and sour pork for dinner. It was awesome. I was even nicer than usual and let my husband have white rice with his. I made fried rice for me. I think tomorrow I won't cook. I'll have leftover soup and he can fend for himself. I'm sure he'll survive without me cooking for a day. Tuesday I believe I'm throwing a pork roast in...
  11. Oh... I never heard of that. My Grammy's has venison and like 3 kinds of raisins and apples and... I think oranges or orange peels or something? Lots of fruit things. I don't know exactly, I haven't helped to make it since I was probably like 10. But it's awesome.
  12. I need to start making my own. I always grew up eating Grammy's, which is made with venison and is absolutely to die for but I can't exactly have it now. It is by far and without a doubt my favorite pie in the whole world, and thankfully my husband doesn't like it. I love him, but if I caught him eating the last of it one of us probably wouldn't survive...
  13. Oh... and also to prove I can deal with things like a grown up when I'm glutened. My favorite author has a series of 30some books, which is made up of a bunch of shorter series, mostly trilogies. But the most recent one is 5 books. I didn't know that when I decided to read the ENTIRE series chronologically. The last book of the 5 isn't out in paperback yet...
  14. I get so emotional. The worst of the neuro will come for me, and I'll be walking like a bumbling drunk in a few days and be a walking bruise in a week. I'm sure my husband was wondering if I was crazy this morning. I should have been all "this sucks, I'll call the insurance." Instead I became completely hysterical. Hopefully we'll both be feeling better soon...
  15. I have all these grand plans, all this stuff defrosting... and I got hit yesterday. And I had to deal with bull$hit from pharmacies and insurance today which for about 5 minutes had me reduced to complete hysterics. (The point at which I realized it wasn't random symptoms, it was a real hit, I'm not an irrational twit.) I'm following through on my plans...
  16. YAY!!! That's such great news. I'll have a celebratory cup of cocoa for you tonight. (Shhhh... no one tell her I drink it pretty much every night anyway. ) Our deep freezer needs a good thaw, so we're eating everything in it. I fished out a bunch of stuff yesterday. Tonight we're just having burgers and whatever makes me happy to make with them.
  17. Sounds like Christmas in Florida was wonderful! I was so good yesterday. Then we made donuts tonight. I managed to put a single small polish sausage in me before I ate donuts until I was mildly ill. I didn't even pretend at the healthy thing with a veggie. Nope. Meat. Donuts. I didn't realize until I was trying to get my tip in the bag that I need...
  18. Mmmmmm risotto. I'm getting sent booze shopping! I was afraid I would have a mishap with my new knives. I was cutting potatoes and it was like cutting warm butter with a hot knife and the whole time I kept thinking about how I was going to get stitches for slicing a finger to the bone instead of getting dinner. Instead I was fine until I reached for something...
  19. So I had to come here because you guys will understand. I got two super amazing gifts today. My MIL got me a jar of saffron, because I've been eying it but just couldn't bring myself to splurge on it. My husband told her and there it was under the tree. And my husband got me the set of knives I've been moaning about every time we go to Costco. Literally every...
  20. I thought I would share this for everyone today. Have a great day. Merry Christmas! http://lizclimo.tumblr.com/
  21. When the snow is super bad my husband doesn't drive in it because his car is not exactly the world's best for a long winter commute in bad weather. So, I'll be picking him up tonight which puts a real damper on the whole cooking thing. I'm probably going to totally cheat at dinner and pick up a box of mac and cheese at the store and throw burgers on the indoor...
  22. We had lemon pepper chicken breasts, baked potatoes in the microwave (because I forgot to put wedges in the oven in time, oops) and brown sugar baby carrots. All finished off with the usual late nightcap of cocoa. My husband found a divine mix for me that is caramel mocha that I'm just totally in love with. It's nice on the nights I don't feel like making...
  23. I had the good sense to agree to work today without checking the weather reports. We've got a lovely inversion going on which meant that by the time I got to work I was gasping for air and all I could taste was dust and exhaust in the back of my throat. It eased up inside but I have to look forward to the trip home. I always forget about this part of winter...
  24. My husband decided that he wanted those pancakes for breakfast, so now I have to actually make dinner. Tonight is chili night. He's coming home late and it'll be cold. Plus I want something that will be truly satisfying. I have an appointment tomorrow afternoon and they want me to fast before I go so getting a good meal tonight will count for a lot. I'm also...
  25. I was making pancakes for supper. I had the dry ingredients all ready and the wet just about ready when the power went out. The power company said 4 hours so I'm headed to In N Out for my dinner. I'm thinking double double, fries and a chocolate shake. I got my pancakes put away by candlelight and they'll hold until tomorrow.
