I read in the Gourmet gluten-free baking article (last fall) that Authentic Foods makes a rice flour that is finely ground. Unfortunately I cannot find it. I am going to have to order online.

Your right Chef Chris is wonderful! However, he could only give me information on Disneyland not California Adventure. We have a park hopper pass and will be at both. I have left a message for Chef Ricky who is in charge of California Adventure. Unfortunately, I have not heard back. I will be calling again. I will post if I get some information.

I called the company probably about six months ago. They had several flavors that were gluten-free and some that were not. I cannot remember the flavors. The only one I eat is the peanut butter one! So enjoy.

I love to top the crusts with pesto, goat cheese and roasted vegies! Yummy!

I thought artificial flavor was gluten-free? I thought it was natural flavor that could contain gluten.

I have tried the Namataste (sp?) and the gluten-free pantry. I really prefer the gluten-free pantry. Thought they were yummy!

For lunch today I had one of their frozen mexican things. I don't eat their stuff everyday. More like once or twice a month. I have not had any problems but know of many people who do.

If it can get into my mouth I make sure it is gluten-free. I changed lotion, shampoo and checked on my handsoap. That is the extent I went to. Like you my skin does not react to gluten. Although I know many people do.

We eat the Ians chicken nuggets and the fish sticks. They are good. I keep looking for a product from Ian's that is a gluten-free mini corn dog. I can't wait to try those!

I have found Living Without in some of the health food stores here. I really like it and am thinking about getting a subscription. I have a subscription to Gluten Free Living and really like it. They always have a great section where they investigate foods for gluten (great one on blue cheese).

My family and I will be going to Disneyland in a few weeks. I have received great information on where to eat in Disneyland but am looking for information on California Disney. Anyone been? Does anyone know the chef I could call? Thank you for any help!

I take synthroid as well. I have to take it because I do not have a thyroid due to cancer (no big deal). I have never experienced issues with my synthroid. Could it be that your levels are out of whack? I strongly urge you to see the doc and check the levels. It may just be a simple dose alteration. Sorry I cannot be of more help.

I probably eat Amy's frozen foods a couple of times a month. I think they do better than some other companies in handling gluten-free items. That does not mean there is not a possibility of contamination. Berness had a post several months ago where she got sick. Amy's tested the batch and did detect a small amout of gluten. What I appreciated was Amy's reaction to Berness. They did not blow her off, but took her complaint seriously. I do think they try to keep contamination to a minumum and work with celiac.

Thought I would post this. I just got it today. Eating out is always risky. Not sure I will bother going. I cannot imagine having mexican food without chips and warm tortias.

Hi Cindy welcome to the board. My children are youger so I have not encountered the same problems. We did have our kids tested once I found out. I always have the attitude that it does not hurt (that much) to have a blood test. Plus it can give you peace of mind. I think it is great that you and your extended family are taking this seriously and getting tested. There are many of us with families that are not getting tested even though they should.

I eat msg, it is gluten-free. That said it is not the best thing for your body. I just can't give up my gluten-free processed foods

Sorry I misunderstood your post. I have heard that you need to be eating gluten for 3 months to get a accurate blood test. My Mom's test came back boaderline because she had gone gluten-free before the test (about 2 months gluten-free). There are several families that have decided to change their kids diet without a firm diagnosis. Based on history and behavior alone. I can only imagine how frustrating this is for you. I am sorry.

Prior to gluten-free I had a recipe that used cottage cheese. Could you try that?

Got these the other day from www.shopbydiet.com and like them. They seem better without the milk. Great snack, heavy on the honey taste.

I have tried two flavors. One was the orignal or plain one. Not my favorite. The other one had a garlic or somekind of herb flavor. Really liked those. My favorite cracker (for a gluten-free cracker that reminds me of a gluten cracker) is the Ener-g.

Please keep in mind that allergies and celiac are very different (apples to oranges). Have you talked to a gi doc? Also keep in mind that if your dd was off of gluten her test results will not be accurate.
I am so sorry to hear of your struggle. As a parent I know first hand how horrible it is to watch your children suffer. Do some research and talk to a good gi doc who understands celiac. Then take a deep breath and do the best that you can do. That is all any of us can do.

Jello is a Kraft product. I have eaten the pudding before without issue. Have the Mom read the label over the phone. If I remember it is less than 10 ingredients and wont take long.

Can you believe someone finally called me back! It looks like Disneyland is a better place for me to eat at. The person I spoke with (I believe Chef Ricky) did give me a few options. Like Disneyland, at the California park you can eat the vendor cart popcorn, cotton candy and fresh fruit (that actully sounds good). At Award Weiners the hot dog and fries are safe, Taste Pilot a hamburger patty and chicken with no sauce (not so exicting), Cocina the nachos with beans, chese, guacomole, and salsa (no meat). and at the Burbank ice cream flavors vanilla, chocolate, strawberry and mint chocolate. At least I have some options. I will post how my trip went when I return from the happiest place on earth!
