  1. I made a pecan pie for Thanksgiving using the gluten free pantry pie crust mix. I thought it turned out great. The instructions have you rolling the pie dough between two sheets of plastic wrap, peeling off the top layer, laying the pastry in the pan then peel off the top layer). This seemed to work really well. Then did my Martha Stewart pecan pie filling. Yum, Yum!

  2. We are finally taking our first vacation since my dx. We are taking the kids to Disneyland! I have read alot about Disney being celiac friendly and our friends will be there at the same time. I am looking for any and all advice about eating gluten-free at Disney. I am the only one in the family that has it. However, I would really like to avoid being sick on our first vaction in 5 years! Please let me know any helpful hints you may have for staying gluten-free in the park. We will be staying in the Disneyland hotel in hopes that it will be easier for me to eat.

  3. Yes, you can have celiac and be able to have dairy. For many of us that have extensive damage dairy is not an option. Dairy can be hard to digest and if your villa are not standing up it makes it that much harder. I have been gluten-free since April and have just now started adding milk back into my diet with little problem. That said there are many celiacs that do not tolerate dairy well so they avoid it.

    Secondly, Kraft singles are safe to eat. I would highly recommend looking at the delphi list for options on gluten-free food. Does anyone have a link? I can not find mine.

    Third, take a deep breath. It takes awhile to figure this diet out. It truly is a life style change. Before you know it you will be reading labels with the greatest of ease!

  4. I think this issue will be coming up more and more as the new labeling laws take effect. From what I understand the new laws (United States) are very strict about labeling for the top 8 allergens. So, even something that we would consider gluten free (the company uses good practices, says it is safe, uses separate lines) could contain this warning if in the building a top allergen is present. It will become yet another personal decision that each of us will have to make as to whether or not to trust the company. Personally, I would trust Midel. I do not know about Russell Stover.

  5. I just baked a loaf of bread and dinner rolls using Breads from Anna. I have to say it is the best product I have tried! I used my kitchen aid to mix it and dumped the poduct in a loaf pan and a muffin tin for the rolls. I let it rise, which to my horror it did not. Went ahead and baked it thinking it was ruined! It turned out great.

    I am not sure if I even want to try making bread on my own after trying this product. The consistency and texture was identical to regular bread. I am extremely happy with this product and encourage others to try it! It is worth it!

  6. Recovery time is different for everyone and it is dependent on how bad the damage is. If it was caught sooner than later it will take less time for your body to heal. In my case the damage was severe so I am still in recovery mode. I have been gluten-free since April. I think with time you will find peace with the diet and not find it so limiting. I remember being almost unable to figure out what to eat. Now it is a matter of what to eat because I have so many choices in my home. Keep reading this site. I have found the information priceless!

  7. Well I did it! I had a wonderful evening out. And I am not sick! The waiter could not have been nicer. He knew about the menu and had no problem answering my questions. He assured me that the chefs were well trained and very careful. I know others on this site have been glutened at Outback so I was skeptical. The salmon and vegies were wonderful. The salmon was very good and the vegies nicely steamed. I will go back. However, I do think going when it is not busy made a difference.

  8. Before my dx going out to eat was my favortie thing to do. I love food! I enjoyed trying new resturants and not cleaning up. However, my husband hated to spend the money so we never did go out much. He always said it was because my cooking was so good. I know it had more to do with him being thrifty (he hates the word cheap).

    I too will be extra friendly and say a silent prayer. We are also going early to avoid the crowds which I hope will help.

  9. I actually sent a e-mail to the company thanking them and wishing them success in their trials. I received a reply from Blake Paterson thanking me for my interest and a link to the University of Maryland. My hope is the more we understand and possibly treat/cure maybe other future celiacs will avoid the pain that so many of us have had to go thru.

  10. I am not sure how others react or if there is a difference between adults and children. That said I know within two hours if I have been glutened. It starts with very loud rumbly stomach, progresses to horrible intestinal cramps and then goes into the big d. For me it seems to take almost a month to recover. Some days I seem okay and then more d. Is there possible cross contamination? This is always a possiblility in my home. Try not to feel too guilty. Being a parent I know it is hard not to.

  11. We have good friends coming to visit for a few hours tonight. We agreed to go to Outback because they have a gluten-free menu. I am still nervous. I was glutoned a few weeks ago at a cocktail party and still seem to be recovering. I had two slices of cheese and some pear. They were on a plate with bread. I knew better. I should have asked how the cheese and pears were cut. I have discovered I am very sensitive.

    I am feeling lots of different things. Scared to eat out yet excited that I might be able to enjoy a meal out. Feelilng sad that this is now my reality and how people really don't understand it. I also must admit I am tired! I would love to crawl under my sheets and have this all go away. Which I know means I am depressed! And to top it off I know the holidays are around the corner and I am just not in the mood to deal with it!

    Keep your fingers crossed that I will not get sick tonight!

  12. After much stalling I finally did it! I made homemade chocolate chip cookies! The only thing I changed was the flour. I substituted gluten-free flour for the regular flour. I was surprised by how good they were. I am not sure you could tell the difference between mine and the ones made with flour. Now on to banana bread and sugar cut out cookies.
