  1. One thing to remember when trying out gluten-free oats for the first time is to go very slowly. When I ordered my oats from the Wyoming company they sent along a sheet that described how much to try and to slowly increase over a period of time. Oats can cause the the big "D" due to the high fiber content. If you have a low fiber diet the oats may throw off your system. Just a word of caution.

  2. About 16 years ago (prior to celiac) I went in for a routine physical. I will try to be short

    -doctor felt a bump/nodule

    -ran blood tests/ they were normal

    -went in for x-rays and scans/ can't remember results

    -had needle biopsy (easy and somewhat painless)/ result no cancer

    -doctor did not believe biopsy/ had surgery

    -surgery removal of thyroid and lymph nodes due to cancer

    -follow up radiation treatment

    -on synthroid for rest of life!

    I have always told people if you are going to have a choice in cancer pick thyroid. It has a very high cure rate. There is one type that does not, but it is extremely rare.

    Of course since this happened so long ago, options for treatment may have changed. Of course I cannot remember why the doctor did not believe the test results. I think because of the scans they thought it was cancer all along.

  3. Thought I would post on my recent experience on my first gluten-free cruise! First, keep in mind that this was a short cruise, 4 days/3 nights. I think longer cruises might have better options for gluten-free. I am also not a great advocate for myself when eating out. I am very sensitive and avoid eating out at home. I was very nervous depending on others for my food safety. However, I think it is a great peak at RCCL's ability to provide gluten-free.

    I had a wonderful time! They brought gluten-free bread each night. Not the best bread, but good, similar to corn bread. Plus I would smear enough butter on it that it tasted wonderful. There was always the option of chicken and salmon. Both I thought were very good. Neither was plain, each had a great blend of herbs and spices. Had a beef dish that was wonderful. I never had dessert. Not on purpose, it was never offered. The waiter would bring out a fruit plate while my dh dug into some sweet glutenous concoction. Sound bitter? Well, maybe just a little. I have heard that RCCL has a fourless chocolate cake on their longer cruises. I did not see it. I also did not ask.

    I had breakfast in the dining room no problem. Lunch was a buffet. I would always find a manager and they would take me around to show the options. I was impressed by the knowledge that managers had of celiac. Wait staff was not great in the knowledge department. They understood no bread but management understood that gluten was more than bread. Mistakes were made. I ordered a cesar salad and had crumbs! I complained and a new salad was made. The service was wonderful. I felt like they truly tried to make safe meals. I was never made to feel as if I was putting them out.

    Will I crusie again? As soon as I have enough money! I am comfortable enough to cruise with the RCCL line again.

  4. Last year at this time I was in living h***! I had gotten glutened, not by cheating, but by cc. I figured out 3 possible sources. I was sick for 3 months. In month 2, I went back to my doc. Long story short I was probably glutened at all 3 and it shut my body down. The good news was that I actually had some regrowth of villi, I had none by the time of my dx. I do think probotics help. Try that and see if it make a difference. It is expensive but well worth it for me.

  5. I have never cheated. Having said that does that mean I haven't been tempted? Of course not. I am surrounded by temptation. I have been able to find my will power through my kids. If they ever get dx with celiac I would like them to think of me as a positive role model. Oh, did I mention I get horrible sick from just slight cc? That helps stay on the straight and narrow as well.

  6. For some reason I cannot get to the shop by diet website. Is anyone else having this problem? Did they go out of business? I hardly ever shop on line but was checking the website and it seems to be no longer. I liked the site and ordered several times through them. Anyone know where I can order individual things of gluten-free soy sauce?

  7. I think all of us have different ways of coping/dealing with the cravings and dealing with celiac. For me I see gluten as poison. If feels like it too! I have horrible reactions to small amounts so that alone helps curb the desire. I will be sick for about a month from just slight cc.

    I also have kids that at some point in their lives may have this. I try very hard to be a good example. If I cheated that would not set the example I want.

    Find what motivates you to sticking to this diet. Change how you perceive gluten. Keep asking questions and someday someone else's idea will work for you!

  8. Are you really missing the actual food or the convience that you once had? If you are missing the food start looking for substitutes or remind yourself that gluten is poision. If it is the missing of the ease of ones life I would agree. This is not easy and in some ways does not get easier. Get pissed, vent on the board, realize we all feel like this at some point.

  9. Is is possible (just thinking out loud here) that she is reacting but not because of celiac? Maybe her body is just not used to gluten. For example, when my mom was a vegie and started eating meat again it caused havoc on her system. However, after eating meat for awhile her body got used to it again. Does that make sense?

    I do think you need to keep the door open to it being a bug as well.

    Maybe for now you decide not to decide :huh: Just keep an eye on her and continue to see if there are correlations between the big d and eating gluten. Then decide to decide!

  10. I do not live in Colo Sprgs but my mom does. Besides the Whole Foods there is also a Vitamin Cottage (tend to be a little cheaper) grocery that carries many gluten-free items. There is a gluten-free bakery called out of the breadbox as well.

    One word of caution I have not heard good things about the PF Chang's in Colo Sprgs. My mom and several people she knows have gotten very sick from there (different occasions). Eating out is always a risk. Not sure if this location has a lax manager or unclean gluten-free area. Has anyone had a good experience there?

  11. You have happened on a bone of contention for many celiacs :D I am of the opinion that the distillation process does not allow the gluten particles to pass through. I eat distilled vinegars and alcohol with out any problems. Unfortunately, I am extremely sensitive so I would know if something had gluten.

    DO NOT eat malt vinegar or apple cider flavored vinegar (flavored being the key word, apple cider vinegar is safe).

    However, having said all of that there are celiacs who do react to vinegars distilled from grains. Which is where the controversy comes in!

  12. I have not been to our local Carrabba's because I know of some fellow celiacs that have had a bad experience. I am sure there are good ones out there. It seems so dependent on how good of a manager is there. Maybe ask around to see if anyone has had a good experience at that location. No matter where you go eating out is always a risk. So as a celiac I do my best to limit the risk.

    It took me a long time to figure out what the slang meant. To be honest I still do not know it all. I do know that dd and ds is darling/dear daughter or son, dh/dw = husband wife, IMHO = in my humble opinion, mil = mother in law. There is someplace that will break down thread lingo but I do not know where it is.
