I believe you. I did some quick research and not much was revealed. In theory, even if grown using wheat (or wheat based) the end product should be fine. If using Xanthan Gum or consuming products that use Xanthan Gum consider purchasing only certified gluten-free as it has been tested to meet gluten-free standards.

Try to see if there are any cancellations with the GI. I had the complete celiac panel many times. I only get a positive on the DGP IgA (even in follow-up testing) and I am biopsy confirmed. Why? My doctors do not know. This is one example why there are several celiac blood tests. -
There is so much still unknown about celiac disease, but a vast majority have the DQ2 and DQ8 genes. However, There are always exceptions to rules. Xanthan Gum can be “fed” with wheat, but it is fermented and gluten (whether from wheat, corn, etc.) should not be in the final product. Maybe you should get your test results. You might not have had the full celiac panel. If my GI had not ordered the entire celiac panel, my diagnosis would have been missed. I am sorry that you are still struggling. -

IgG what? DGP, AGA, TTG? Assuming it was the standard (and popular screening TTG, a positive would mean that you should have been referred to a GI for an endoscopy and biopsies. Those look like gluten removed beers and are not really gluten free. They are made with barley and wheat and supposedly the “special” brewing process reduces or elimates the gluten below 20 ppm. If you can feel it and manipulate it, your GI should check you for a hernia or fatty tumors. Both my dog and my neighbor had fatty benign tumors. Of course cancer should always be ruled out. I was very surprised. I had no idea I had celiac disease or even suspected it. Testing is critical for a diagnosis. I encourage the full celiac blood panel because I only tested positive to the DGP IgA which is not common. My biopsies revealed intestinal damage. -

I simply had anemia — no GI issues. Two months after my celiac disease diagnosis, I suffered two vertebrae fractures doing nothing. As a result of undiagnosed celiac disease, I developed osteoporosis. You can see how differently celiac disease can present. -
@vvicin02— normal protocol is to remain on gluten until all testing is complete, even the endoscopy (so many primary care physicians do not know this). Put your requests in writing. Be direct and specific and list the reasons why you should get tested for celiac disease. Your doctor should respond. If you do have celiac disease and he refused to screen you despite your asking, he is setting himself up for a lawsuit. Or....just get another doctor. -
