But other than gluing meat strips together in restaurants and some processed meat products, where in the US have you found it being used and not included in an ingredients label? I certainly want to avoid this product since it is unclear that it can cause or harm those with celiac disease. The USDA is just using this on meat products...

Oh, where do you get your food? Dorm food is can be a gluten nightmare. Think about informing the disabilities office on campus. You can get things like access to a kitchen or more time on tests in case you have to run to the bathroom. Maybe a refund on your dorm food too if they can not keep you safe. -

You might be able to consume dairy without any problems. The villi tips normally releases the enzymes to digest lactose. When the villi are very damaged, no enzymes. Makes for bad GI symptoms. I politely disagree. The EU guidelines for diagnosing patients without biopsies now includes adults (at least in the UK) who have a positive TTG, but that result must be 10 times the cut off. What did the biopsies reveal? How many tissue samples were taken and from which locations? You should get a copy of the pathologist’s and the endoscopy reports. You should see your GI. Your celiac disease might be active due to gluten exposures or you could have another illness. Once you have one autoimmune disorder, you can develop more. Your GI can help you figure this out.

I disagree. The article source (Linked in the celiac.com article) stated that the TTG result must be 10x over the top of the range. No hepatitis here, but I can say that my thyroid antibodies were very high, yet the rest of my thyroid tests were normal. It took a few years before everything went wonky. Did you get a complete thyroid panel which includes antibodies? My thyroid panel was normal except for very elevated thyroid antibodies. It took a long time before I really needed thyroid hormone replacement. Also, except for iron (just ferritin), I had no deficiencies. Not all celiacs are malnourished. -

You must be consuming gluten (about 1 to 2 pieces of bread daily or equivalent) for any celiac disease test to work as Trents indicated. Talk to your doctor about retested after you go back on gluten for a minimum of 6 weeks. -

You can use toaster bags in any toaster and remain safe, but I do not think this is your problem. I think you need to adhere to safe gluten-free kitchen practices or build that second kitchen. I am sorry about your miscarriages. Celiac disease can definitely contribute to fertility problems. Thyroid issues can also lead to miscarriages. Has that been checked?
