How old was the gluten-free flour? Where was it stored? Flour can last for a year or longer if stored in the freezer. On the shelf, for a few months or what the package date says. Some grains, like brown rice, go rancid within months unlike white rice which has a long shelf life. What grains were in your gluten-free flour?

I am sorry that you are ill. Have you had repeat celiac antibodies testing? That can help determine if active celiac disease is the root cause of your symptoms. If you do end up getting an endoscopy, you should follow the preparation instructions. They only biopsy the upper end of the small intestine just where the stomach empties into it. Did you know that the initial guidelines of 20 ppm were based on about 59 study participants? That is a pretty small study. While you may be asymptomatic, many celiacs who have Dermatitis Herpetiformis, report that they can not tolerate 20 ppm. Their reaction (rash) is very visible. How are your antibody levels? I wonder if those oats are grown in dedicated fields or are mechanically sorted regular oats? I do know that Bob’s does a good testing, but mechanically sorted oats have been controversial over the last few years. Maybe just a bad batch? You should let the manufacturer know. -
