Who knows? What is clear is that your experiment might have failed. Three weeks is not the recommended gluten challenge, especially if you had been gluten light prior. It looks like you had the TTG and maybe the EMA or they did not do the EMA test because your TTG was negative. In any case, the DGP IgA or DGP IgG tests were not given. I suppose you could be glutened by an oven. One that is crusty and disgusting (never cleaned), shared with a home baker, or one that is in constant use (like a pizza oven or one in a bakery). Then wrapping your gluten-free food in foil or parchment would be helpful. But who lets their oven get that disgusting? Wait that would be people like my co-workers... -

Usually, we dip the corn tortillas in warm, watery, enchilada sauce in a small frying pan before filling and rolling. It softens them and keeps them moist. The rest of the sauce is added on top. About 30% or a bit more of the entire population has the celiac genes. Only a tiny few actually develop celiac disease. The gene test just rules out celiac disease. My advice is to find a medical doctor who is celiac savvy. One that follows all the national celiac disease research centers guidelines. Those guidelines do not include stool testing... -

Hi! The old AGA (anti-gliadin antibodies) tests are no longer in use, but I am not sure what country you are in. These AGA (IgA and IgG versions) were replaced by the better and more accurate DGP tests. I think you need to confirm with the lab as to which tests were run. The EMA is even older.
