  1. Hi! Make sure you are getting the complete celiac panel which includes the TTG, DGP and EMA. Know that some celiacs are seronegative. Know that people like me never test positive to the more popular screening TTG IgA and TTG IgG versions yet intestinal biopsies proved otherwise.   2. No sorghum is naturally gluten free. If it was in a pancake mix that was labeled gluten free, the gluten content should be less than 20 ppm and safe to eat. The company took the steps to insure the sorghum flour was not cross contaminated. Was the pancake mix certified? That is even safer. Chances are you might have an intolerance to sorghum products...
  3. Have you had follow-up testing to see if your celiac disease is still active? It could be something else or it could be due to gluten exposures.

  7. I was just anemic when I was diagnosed. No GI issues. But now, when expososed to gluten, I get severe reactions (GI). So, I think your response is common. I avoid gluten like crazy. Who wants to feel that bad?

  9. Have you had follow-up testing? Is your celiac disease still flaring/simmering? You should try to find out if celiac disease is the cause of your current malabsorption issues or if you have another illness. If you have been strictly gluten free, you should have healed by now.   16. Welcome! You should not put on weight unless you eat lots of gluten free processed junk food. Whether it is a gluten free cookie or a wheat-filled cookie is pretty much the same in terms of calories. I hope your GI was able to have you work with a dietician. It can be very helpful.   17. Sorry, but you are not correct. One case study about a patient with refractory type 2 celiac disease (very rare) does not make a cure. The only treatment for non -refractory celiac disease is a strict gluten free diet. Celiac disease can not be cured, but it can go into remission.

  22. I think there are some typos. Where is the flour? Did it get mixed up with the nutmeg? I personally never use shortening anymore (trans fats). I prefer butter or coconut oil or a combination. I also prefer guar gum over Xanthan. Fall baking. I can not wait!

  24. I would not take iron unless you are iron-deficient. One gluten exposure is probably not going to make you anemic. You can overdose on iron. I did take iron at the advice of my doctor when I was first diagnosed with celiac disease. I had the lab tests to show it was necessary. Otherwise, the gluten-free diet and iron supplements resolved my iron...
