Four days of being gluten free should be fine for testing. Celiac experts say that healing can in theory occur in two weeks, but that is rare. The learning curve for the diet is pretty steep. -

You might see if a walk-in lab is near your home. You can get tested without a doctor. The TTG IgA is the commonly used celiac disease test. I agree, non-processed foods are best in the beginning when you are learning to read labels. I think you will heal faster too (less accidental gluten exposures). If you must consume processed foods, stick with those marked gluten-free. It will just simplify your life for the next few months. Do NOT eat out until you feel better and can afford to take... -
I was pretty much GI symptom free until after my diagnosis. Anemia was my main symptom. Now after a gluten exposure, I get severe GI upset which can last for weeks. This means I dread eating ANYTHING, because it hurts. My food intolerances reappear for a while (like lactose/milk). I usually make a big batch of mushy stew or soup and consume it for breakfast...

You might try ruling out Dermatitis Herpetiformis (DH) which is the hellish rash version of celiac disease. It is commonly linked to Hashimoto’s thyroiditis. Welcome! Just be sure you are consuming a full gluten diet (about one to two lives of bread per day or equivalent). Sometimes doctors fail to relate this information. All celiac disease testing requires patients to be on a gluten diet or the testing could be invalid. -
