Is your celiac disease active? When was the last time your antibodies were measured? Maybe it is time for another endoscopy. It might not be celiac related at all. My celiac disease is not active. Welcome, Scott. Did your doctor run the complete celiac panel or just the TTG? Not all celiacs test positive to it (like me). Some celiacs are even seronegative. Did he run a gene test? What if the damage was beyond the reach of the scope? When you had the repeat endoscopy in September, did they repeat the blood tests? The testing to validate a brewed/fermented process is what is in question. The ELISA test was not designed to test this process. So it could have gluten in it or it might not. “Everything looks good.” That is what my diagnosing GI said. My biopsies revealed moderate to severe damage. My new GI’s scope has a much stronger magnification. Keep us posted, but seriously trial the diet regardless of the outcome. The small intestine is vast (larger than a tennis court) and damage can be spotty.

Well, it might be worth experimenting with an iron supplement if you have restless leg syndrome. Keep in mind that too much iron is just as bad as too little. A ferritin levels of 37 is still within range (see link). Mine is around 55 (post menopausal) but was at a 2 when I was diagnosed affecting my hemoglobin levels so that I was severely anemic. About 10% of celiacs are seronegative, if I recall correctly. You already had a set of Immunoglobulin tests and your IgM was a bit elevated and your IgA was normal.
