  1. Thank you both for your rub/marinade ideas! I tried a rub that was a little too peppery (as in chili peppery) last time. It was good but it struck me as imbalanced.
  2. I have a pork loin to roast tonight and some chicken breasts to grill. I'm getting a little tired of my normal routine. Anyone have a good spice rub for the pork? Aherm.. I see Karen you have a rub mentioned in your post???
  3. I haven't decided yet- But I wanted to try and make some gluten free bread rolls tonight. I made some last night with no yeast and they came out a little too flat. Delicious, but flat. I forgot what fresh baked bread smelled and tasted like.
  4. I have been dealing with potty training a 3 year old beagle rescue... and this is humorous yet totally my life. ::face palm::
  5. Last night I made a roasted pork sirloin with an herb spice rub recipe I got off of allrecipes.com. Served with brown rice and broccoli. I'll be eating it again for a few days.
  6. I made an on the fly chili last night with 3 chicken breasts, keilbasa sausage, black beans,kidney beans, onions, roasted red peppers, jalapenos, rotel tomatoes and corn. I used a homemade chili seasoning. Turned out so great!
  7. Yeah.. I seem to have the same fate with eggs as you. I can eat them when "mixed and diluted out" in baked goods. But I used to eat egg whites every morning and I love a good fried egg. *sigh*
  8. Been sticking with grilled chicken, rice/potatoes and veggies lately. However I did make a pretty fantastic lasagna a few weeks ago. But the cheese proved to be too much for my poor GI to handle. I am very dairy light these days. Figured out I have an egg intolerance which makes me sad... but at least I don't have crazy GI issues from it anymore.
  9. I don't have any grand plans for dinner.. chicken, broccoli and potatoes. May swap out broccoli for asparagus. Who knows! TGIF!
  10. Dinner tonight is going to be boneless ribeye with a baked potato and broccoli. I'm really looking forward to it. I haven't ate red meat in well -- too long!
  11. Saturday evening I had a small dinner party. I decided I was going to make Indian food. I have only ever made 1 curry in my life. So it was a bit ambitious. My menu was: gluten free naan, chicken tikka masala, tofu tikka masala (vegetarian guest), basmati rice, and Hari's suicide potatoes (recipe from celiac.com). The naan was FABULOUS!   13. hahaha!! I love it! I am going to be making donuts for a good while.. I am obsessed! Bake time of 10 minutes??!! The mix to mouth time is just so short! LOVE!
  14. Are you going to add egg to it? (isn't there egg in mayonnaise?) I've subbed greek yogurt in for sour cream before but never mayo.
  15. I can gain weight by eating them.. I confess I ate one last night and one and a half today... extra time on the bike tonight!

  19. I am going to attempt to bake some doughuts/donuts (sp?) either tonight or tomorrow. I have to run out and buy some pans because I can't wait for the one I ordered from Amazon to get here Saturday. Does anyone have any tried and true favorite recipes?

    YAY for good times with good friends and good food! It's interesting to test the theory on the cramps being anxiety versus gluten induced. How are you going to test that theory out?
