  3. I think everyone has a version of what is 'healthy' and they are not always a unanimous definition accepted by all. I personally smoke cigars. I have a humidor with about 15 cigars in it. I work out 5-6 days a week, eat healthy, abstain from alcohol but that is one of my indulgences. I don't necessarily consider myself unhealthy for it.
  4. I'm having a 'treat meal' tonight: grilled chicken nachos with red bell pepper, onions, and mushrooms. I haven't eaten this type of meal in a long time. I'm very excited. For those that don't know I track my macronutrients so I weigh/plan my meals accordingly. I spent last night figuring out my meals for today so I could fit that in. Sooo looking forward...
  5. If you had a positive blood test for celiac... then the inconclusive one is null and extraneous information. You should not be eating gluten-light but truly gluten free. I would definitely stop eating gluten to avoid this symptom. I've never had this symptom but celiac is linked with infertility so it likely has a larger role.

  7. Made another chicken stir fry. For the sauce I used Worcestershire, San-j gluten-free soy sauce, some sriracha and 1 cup of light balsalmic vinaigrette. To thicken it I used guar gum--but it didn't need much if at all. I used 2 bags of frozen stir fry veggies and 3 lb of chicken (a bit much .. but I was not willing to leave behind 1 breast and cook that...

  10. Well - you are doing one thing that can help you and that is sharing your story with people like us who understand and 'get you.' Hopefully things will get better over time and you'll look back and think 'WOW! I am amazed I was able to do all that when I felt THAT bad.'
  11. Mine was different...no lasagna noodles. Instead were potatoes. I like your recipe though.. it looks really good. I'll have to look in my book to see the name of what my recipe was called so I can find the corresponding link.
  12. I did try it.. and I think my recipe is a little different than what you are describing.. mine said low for 7 hours... and it was WAY too long! So either the recipe is different or it got mis-printed in the cook book I have? I thought the flavors would work well but it tasted over cooked.
  13. Went to Point Reyes, CA this past weekend for Moosie-Man's birthday. We took our leftover taco stuff from Friday and 2 slices of cake. Divine! We had the dog with us and there are only 3 dog-friendly beaches. We had fun running and walking along one and just sitting and watching the waves.   14. Unfortunately they were frozen and thawed blueberries and not fresh. Blueberries are just so expensive!! These taste just as good! Thanks Lisa!! I had a lot of fun baking this. Baking was a passion before diagnosis and the gluten free baking intimidated me. But I think I am starting to get excited about it again!

  16. Chicken tacos, mexican brown rice, refried beans. Birthday dinner for my boyfriend. I also made a Blueberry "Pancake" cake with maple butter cream frosting. I used the yellow King Arthur mix and doctored it up with cinnamon, nutmeg and blueberries. Dusted it with cinnamon sugar.

  19. I am so excited to try Stephanie O'Dea's recipe for crock pot buffalo chicken casserole! I bought her cookbook last week out of menu boredom (I was in a super frustrated place - it gets tiring cooking all the time! Can I get an amen!?) I can't wait to go home and try it!   22. Yep... this disease can certainly take most of the fight out of you at times. It is draining some days. Most days are good... but the bad days... are really bad. Hang in there! At least figuring it out young can hopefully prevent all the negative side-effects and other associated disorders from not being diagnosed in time...
