Well... my diarrhea has continued and not improved despite resolution of most of my other celiac symtoms. I'm going in to be tested for microscopic colitis next month. I just want to have a normal phucking bowel movement. It's been soo long I don't even remember what one looks or feels like! Hoping for answers.

Before I diagnosis, I did not feel celiac pain. I would notice my tummy bloating, my legs swelling, and have a pregnant looking belly. I had extreme fatigue and foggy mind, but didn't realize those until it went away one day. I trudged on with these mysterious symptoms that were "All in my head." Wondering in my dreamy state if something possibly was wrong.
Now, I am 18 months (well there about) into a gluten free diet. Some mysterious way, I got some gluten. Right away I felt sharp pings in my abdomen. The old pregnant looking belly appeared, I had a couple of days of extreme fatigue. I even got diarrhea, and I didn't have that as a symptom before diagnosis. . If I had I felt these signs during my 30 years of battling celiac disease; I would have been asking someone questions right soon. But I didn't feel them.
Today I am glad for pain. It is there to tell me (In no uncertain terms) that something is WRONG or something needs changing. I don't feel like I am dying, or have gone back to square one. I still have a clear mind and energy. Yet, I have been enabled to hear with once deaf ears, and I see where I couldn't see before. Pain is my friend today.

This was a very simple recipe to make, and it doesn't bother me at all.
1 large sweet potato - chopped into large pieces
2 standard size Idaho Potatoes - chopped into large pieces
1 beet - chopped into large pieces
1 handful baby carrots (or 2 whole carrots. You can add more if you like, but I'm not a huge fan of roasted carrots)
Italian Seasoning
Salt
Garlic Powder
(I don't eat pepper much any more, but you can always add pepper too)
Preheat oven to 425. Place veggies on cookie sheet one layer thick. Sprinkle spices and olive oil over veggies. Cook for 40 minutes. Serve.
(Feeds 2 as a meal or 4-6 as a side)

For this recipe, I chose sliced almonds and chopped walnuts. However you can take your pick of nuts.
Nutmeg
Star Anise
Cinnamon Sugar
Nuts
1/2 tsp butter
Coat pan with the butter then place nuts and spices (pinch of each) in. Cook on a low heat, stirring frequently so that nuts don't burn. Nuts are done when completely coated and spices stick to nuts. Very tasty! (Just be careful, the nuts burn easy)
