  1. Nachos today! I like to make mine with just a bare sprinkle of cheese... I use non fat refried beans on the chip, then the meat, sprinkle of cheese just enough to put the taste there. Then tons of salsa. Yum.
  2. Yesterday I played it simple and just made hot dogs for dinner. Sometimes all you want is junk! Tonight I am making some little steaks I got, with sweet potatoes and carrots. Will be a monochromatic dinner but that is what is left at the end of the week
  3. Last night I made this recipe http://userealbutter.com/2011/02/07/quinoa-mushrooms-kale-recipe/ just by itself, it is mushrooms and kale sauteed with quinoa. I used about a third of the fat she did though. Tonight is gonna be baked chicken leg quarters with... something... maybe sweet potatoes.

Yesterday I made chicken broccoli rice casserole, today I made grilled chicken with asparagus and rice. My george foreman grill seems to have crapped out on me and only the top burner heated up.   9. Just got back from a great trip to see a friend... Gosh I love Seattle! Great gluten-free dining options. Pulled some chicken tenders out of the freezer and grilled them up on the george foreman, served with some canned veggies. Gotta go get some groceries tomorrow! While at her house we made gluten-free chicken fried steak. Mmmmmmm.

  11. Last night I grilled a pork tenderloin and had it with some leftover sides from two days before. Had my IV infusion this week and it beat the heck out of me this time so I haven't done a lot of cooking. Tonight I am going to whip up breakfast for dinner.
