  1. Looks like he's put a lot of thought into it, Nor!! I have a son like that--wouldn't eat a green veggie if you paid him. The other son prefers broccoli to dessert.....go figure!

  3. This was so good--I started the onions in the olive oil and then added the shredded fresh carrot (about 2). A few minutes later I threw in a box of frozen chopped spinach that I had microwaved for 7 minutes. I let all that saute together for a couple minutes, added the rice, then the broth. When I took it out of the oven, I added 2 tablespoons (or so)...

I took that oven risotto recipe and have made it with the chicken, without as a side dish, and added spinach, shredded carrots, a little garlic, and more cheese for a really yummy main dish. Using veggie broth and simply omitting the chicken (maybe subbing mushrooms) would make it a nice vegetarian meal. Tonight however, it...

  6. But of course I was alone for dinner last night so I made myself pancakes. Probably shoulda had some wine too.....
  7. It would seem that way--knock on wood, I don't get sick nearly as often as I used to before being gluten-free.
  8. We had a couple errands to run after work so I quickly made spaghetti with green pepper and sausage. Sauteed the pepper and sausage in a little olive oil, threw in a jar of sauce, and let it simmer while the pasta was cooking.
  9. Roast beef hash made with leftover pot roast that I had frozen topped at the last minute with grated cheddar cheese until just melted.
  10. Yeah--once you get past the prep it's not bad at all.
  11. Oye sa1937--glad that's over and done with! Dinner tonight is baked chicken thighs with sea salt and garlic, roasted potatoes, and spinach with olive oil and more garlic. Homemade rice pudding for later
  12. Last night, in my son's wee kitchen, I made oven fried chicken, smashed potatoes, and broccoli. Today for lunch I had the aforementioned big bowl of homemade popcorn
  13. Last night--vegetable risotto with lots of carrot, spinach and cheese and acorn squash. A big batch, as I'm taking some to husband's company Christmas party tonight. Restaurant will heat and plate it for me--they thought bringing my own food would be "safer for everyone".

  15. Love it!!! I've been known to substitute a big bowl of homemade popcorn for a meal from time to time.....

  17. I get diarrhea from soy--even soy oil. Tapioca and legumes cause severe nausea and stomach pain.
  18. Leftover Tink spaghetti and sausage.....will be alone since husband has a meeting and I can be lazy!
  19. I use either Extra Strength Tylenol or Extra Strength Bufferin. Did your headache start after you went gluten-free?

  21. So funny--I was thinking the same thing. My son would love it--I am going do do a rib roast and the risotto would be really good with it. Plus it can go right alongside it in the oven
  22. Karen is right--this stuff is good! Last night I made it without the chicken--works great either way--
