Some things I was sensitive to were resolved with digestive enzymes and changing up cooking methods on others. But in the end your best bet is a food elimination diet and finding the triggers and avoiding them for a bit. I think the vital what gluten was used before, I think the person did a few tsp a day of it? I do not think they ever got back to us. Vital Wheat gluten should be the gluten proteins left after the starch has been washed away. Yep had the constipation issues for years, went regular after going gluten free. Now days my reaction is a different and the last exposure left me with diarrhea. You find your symptoms can change over the years with this disease. You might also find many other things and health quirks you took for granted will clear up once gluten free.

I would actually suggest avoiding anything that is made in the blender, even commercial blenders are prone to stuff getting stuck the seal around the blades. Odd I know but I have noticed it with the Blendtec I use. Your best bet would be sticking to plain coffees with syrups and what ever milk just poured in. I did fine with stuff like americanos with flavor...

In addition to the above advice, I dealt with the constipation issue for years in the past. Was a bit weird since normal and even large doses of ex lax and miralax did nothing for it aside from a normal bowel movement (Think like the hole 8oz container of miralax for this). Hmm you might double check the oatmeal to see if labeled Gluten Free. They do often have contamination issues otherwise. Another thing to consider is like 10-20% of celiacs will react to oatmeal the same as gluten to some degree regardless of being gluten free. -

The elimination diet is a good route, garlic and onions give me issues when my gut is not happy (celiac or ulcerative colitis), high fiber foods and veggies in general were hard with my intestines causing gas and pain....I mean I was fine with smooth almond butter but rough veggies or just chewing nuts did not bode well. I did develop a issue with pea protein earlier this year causing some gastro issues. But the nuts/seeds are still in my diet without issues. I shifted away from flax and chia and rarely do I still use Hemp, the headache of getting stuff without issues was a problem. Well Celiac never goes away, it is a genetic autoimmune disease (Gene can be dormant at birth but permanent once active). Sure the damage can heal in a year or so, but if you ever eat gluten the immune system will start attacking your intestines again and normally it is worse then it initially was. As mentioned Rye itself contains gluten, best thing I have been able to do was make homemade gluten free bread with gluten free flours and used caraway seeds to help with that flavor. I played with that nearly 5 years ago so I do not recall the recipes. -
Yes I misunderstood when you mentioned blood test assuming she had had recent blood work done that still showed high antibody counts, follow up test do need to be done to check if they are going down which seems they have from a follow up comment. Hmm my perspective is really quite skewed, my mother made very little attempt to keep the house gluten free and would cause me to get sick constantly. I still to this day do not trust her with my food 6+ years later. Other random incidents have drilled it into and I only trust food I make myself in my own dedicated place. The distention makes me think you could have gotten gluten in somehow, perhaps some contaminated cookware (cutting boards, colanders, scratched pots/pans, cast iron, wooden utensils, etc). I had issues getting sick drinking coffee/espresso at some coffee shops and I always assumed some form of cross contamination, but drinking at home brewing myself from Christopher bean coffee and some stuff from the local grocery store never caused the issues. Back when I lived in a shared home I kept all my stuff in a different area and brought my stuff into the kitchen to cook hours before anyone else using my own pans. Others find keeping they personal food items in their own rooms easier to avoid contamination but would also serve to keep it separate. IE see about getting or setting up a little kitchenette... -

To be honest going carnivore for me was the best diet. Well life has been crazy. I guess the biggest issue has been my truck I got so I could travel more and go to farmers markets with. I took it in with a extended warranty to get the A/C fixed and the engine started having problems. Look for paleo based granola that use nuts, seeds over grains, plenty of recipes for this and some companies make them premade but expensive.

You might try a elimination diet, try cutting down to 1-3 food items (nothing processed think plain meat, eggs no seasoning) and only eat that for a few days. Change them out 1 at a time every few days trying a different food item to see how you react. It is very common to celiacs to also get other food sensitivities.
