  1. Bit of a modified recipe to be Keto and Paleo This is going to be a 1-2 times a year special for me. 8x8 Baking Pan 1 Can of Palmini Lasagna 2 large Eggs 1.5 Containers (12oz) Kite Hill Ricotta 1 lb of Ground Beef 2 Cups of Marinara Sauce (Thrive Market Makes a Keto and FODMAP version, I made my own this time) 1...
  2. So I finally made it to that specialist in the city, he straight up put me on 4x the standard UC medication and within a few days I am active again and able to leave my house. He stated the Silica I thought caused it would have softened and gelled in my intestines thus it probably only mildly irritated my intestines. But he said nonetheless it seems it flared...
  3. A gluten challenge is normally 12 weeks of 1-2 slices a bread a day for the blood test. Do note there are other blood test that can be more reliable. https://celiac.org/about-celiac-disease/screening-and-diagnosis/screening/ They normally do 2 weeks to check for damage directly to the intestines with a gluten challenge but the intestines splayed out are...
  4. Just gonna throw out a note padded recipe I have had since last year for a sugar free and dairy free eggnog. Between the lactose, and the sugar in real eggnog I imagine quite a few end up with bloating, gas, and other issues. 4 large eggs 2 large egg yolk 1/2 cup (100g) granular Swerve Sweetener, Pyure, or Truvia Naturals 1/4 tsp salt 4 cups...
  5. Um most paper products are gluten free, unless they are those new rare ones made from wheat grass, and testing has proved that to be hit and miss. Most TP is made from wood from tree farms so gluten free, and making coffee filters with gluten would really hurt the taste for dedicated coffee drinkers. They stopped using gluten in newer spackle a few years...
  6. Seen it last 6 weeks after a exposure, it can take that long after a CC incident for the antibodies to go down and you body to stop attacking the intestines. BTW as a celiac you have to absolute avoid gluten, flour dust settling on your food or food prep area then getting consumed will make you sick. Tiny crumbs, residue from unwashed hands or unchanged...
  7. It can take months or up to a year to completely heal. A single reaction go gluten from cross contamination can keep antibodies raised and the body attacking for up to 6 weeks. Be patient with it and learn the diet, sticking to whole foods can help. Few tips, remove dairy for while as the enzymes to break it down are produced by the tips of the villi which...
  8. So wanting a thicker sturdier crust and on a pizza craze I found, disliked and modified a recipe for making a low carb crust out of shredded chicken. One thing I like about these crust is they are sturdy enough to make in batches and freeze/fridge between layers of parchment paper for later unlike others I have tried. Then just top and heat up later. Makes...
  9. Keeping on gluten til they finish getting doctors blood test and a biopsy will ensure you have it on your medical records...that can be a god send. Imagine something happens and you end up hospitalized and the official diagnosis is not on your charts? You will be fed gluten food and your "Preferences" for gluten free will be ignored as they will not take...
  10. It depends on your dishwasher, ones with a disposal in them, a screen mesh, or those new ones that retain water from one wash to prewash the next might need some extra work. Generally a surfactant like a soap can loosen particles from surfaces and remove them. Running multiple cycles with detergent and perhaps a dishwasher cleaner and or another cycle or...
  11. The thing with eating out is it is Russian roulette, where could the CC have happened? Could have been a shared knife. Maybe they prepped it on a surface that had a gluten bun on it. Could have been someone not changing gloves Could have been they grilled something with gluten on the grill before your burger Did you have fries? Someone could have...
  12. Paleo diet with Keto Macros...sometimes I go a bit high in protein but it does not spike my blood sugar too much. There are some change ups to foods, IE using almond/coconut flours for baked goods, Erythritol for cakes, brownies, bars, buying special pizza crust from Califlour foods or Mikeys or just making my own with a fathead or shredded chicken base....
  13. .Celiac can become active at any point in life, many find they had some kind of stressful illness or life event trigger the gene. Standard diagnosis is via a full celiac panel then confirmed by endoscope and biopsy, if you doubt your diagnosis I would suggest doing a gluten challenge (12 weeks daily 1-2 slices of bread for blood or 2 weeks for biopsy) and...
  14. I have used various ones, Realzymes makes one for your diet type, Enzymepedia makes some general ones and a lipease one for extra fat digestion, I also use Doctors best for bromalain right now since Jarrow became hard to find. I did a post awhile back on it https://www.celiac.com/forums/topic/119919-digestive-enzymes/
  15. As Cycling lady said enzymes and fasting. I take digestive enzymes (Realzymes Keto formula) and extra lipese (to break down fat) from Enzymepeida along with bromelain from another company for protein. Meat takes longer to digest, start with a 16 hour fasting window and slowly up it, I am at 20 hour fasting window and I am good. Another thing be sure your...
  16. Started having vomiting within the hour of consuming anything with Canola oil last year. Just another food intolerance I added to the list.
  17. So I took the original idea of the fat head pizza (will include original recipe at bottom), I replaced the cheese with Miyoko's Vegan versions to make it dairy free, then used what I learned earlier and replaced the flour with Pork Panko from BaconsHeir to make this. Heck you can go carnivore with it and just sub the pork panko as I use the same grams of...
  18. This varies in cause, there is such a thing as gluten withdrawal. Literally like withdrawal with and additive drug full on to the letter, yes some people experience this and I did to some degree. Another concept is you have not got the diet down. IE if you just change to gluten free breads etc. and not a whole foods diet your going to have issues. Most...
  19. 3lbs Chicken Breast (about 4 breast), Cut up into 1" cubes 2-3tbsp Avocado Oil 3-4 Stalks Celery 3-4 Garlic Cloves, Minced 1 Medium Onion, Chopped up fine 2 tsp Ground Sage 7 Cups Chicken Broth 12oz (3 Cups) Riced Cauliflower (I defrosted some premade frozen) Salt and Pepper to taste 1. Heat up oil in a large soup pot on medium Heat ...
  20. If your a diagnosed celiac I see several flags here and would suggest reading the newbie 101 section. First off you should never use wheat flour in your kitchen or even be in a kitchen that uses it. It can be airborne for hours and if you inhale it in your nose the trapped particles will eventually run down your throat and be digested and can trigger a reaction...
  21. I am no doctor but you should probably see about following up with a full celiac panel including the other test, and see about getting a GI consult and perhaps a Endoscope with biopsies to confirm (would also give idea of any other issues in the stomach/intestines). Be sure your doctors are familiar with celiac as many of us struggled getting a diagnosis...
  22. I went with liquid ones from Liquid Health and used them in a glass of tea in the mornings and afternoons. I used the B-complex and Neurological support one. I used to use a half dose each twice a day but now only do it once a day, in addition I eat a paleo based diet with keto macros high in meats now days and be sure to get leafy greens and nut/seed based...
  23. Ok this recipe is mad scientist level out there, forced by medical issues into a corner, unable to eat almond or coconut flour right now, allergic to dairy with Celiac disease and unable to eat carbs....but craving cinnamon rolls. This took my creativity to a new level and it was godly good and the secret ingredient will blow your mind, Pork Panko. DO NOTE...
  24. I completely agree, after all this crap I came to research and learn that the Paleo diet is the most natural diet for humans that we are evolved to eat. Heck we are genetically evolved to rotate on a keto for part of the year. And here I am now forced on a Paleo and Keto diet if I even want to live after my system broke.
  25. ...Ironically when I was first diagnosed gluten was making me constipated. You might have a similar issue when you eat it directly then after your loosen up? It can take months for your bioflora in you gut to adjust to a new diet so you might just be getting loose stools because your not sticking to a gluten free diet long enough to regulate. You really...
