  1. Yesterday was National Nacho Day I had something akin to nachos for the first time since 2014 yesterday. I used 4505 Pork Rinds for chips, I browned some ground turkey, and I used Siete Cashew Queso. and Wholly Guacamole along with Miyoko Mozz. The topping sauce was amazing I took the jar of queso and mixed in 10oz of ground meat and 4 oz of guacamole and...
  2. Um could it be something to do with gastroparaisis? I sometimes get issues with my stomach not dumping food to my intestines for what ever reason...it has some food triggers and sometimes I can use a supplement to force it or trick it to dump IE Vitamin D drops, Hot beverages, Magnesium, Betaine HCL or Enzymes...and seems higher fiber/greasy meals and anything...
  3. Like you looking back I had tale tale symptoms most of my life. But my gut was proved to be totally healed after a few years (confirmed via scope). Other complications such as my developed food sensitivities have come and gone over the years. And I have gained much of my feelings back from the ataxia nerve damage the past 5-6 years. Still have some issues...
  4. 12-14 years ago I ended up with Acid reflux that ate and caused a scar in my esophagus, then when ever it acted up or I ate anything it would trigger coughing and I had a chronic cough for years til it healed. my family sorta helped coach me to ignore the cough since it was a fake urge to clear my throat. My acid reflux was a freak issue to be honest...
  5. I developed a corn and whey allergy after my celiac diagnosis and gluten exposures. We see it quite often that after a gluten exposure many develop new food allergies, sensitivities, or intolerance. I had many other sensitivities and intolerance issues and many resolved over the years. https://www.mindbodygreen.com/articles/are-food-sensitivities-for-life...
  6. There are a few Texas Celiac Support groups on FB and more about gluten free living...although they are more spotty on strictness to diet. I wish you luck I know how annoying a shared house can be and Dallas rent is insane alone.
  7. So today I started some experimenting, I used what I learned from my protein sticky dough experiment about psyliumm husk gelling with warm liquids and applying it with a gluten free flour mixture (almond/coconut/Swerve/guar gum )then taking the hot mix and cooling then adding in the eggs and baking powder akin to a choux pastry dough I can get amazing rise...
  8. I found magnesium with the B-vitamins helped the pins and needles....mine felt more like burning needles on fire though. It took over 5 years for me to get a great amount of my dexterity back, it mostly manifested in lack of sensitivity to hot/cold, and sharp touches (cuts/stabs) along with a slight delay in reactions (Did not effect daily life, but I had...
  9. So needing to find a keto brownie that would be easy to digest I found a recipe and modified it to fit my needs. These are best served hot so leftovers are best heated before serving. By the way if you have a icing or some chocolate syrup I would suggest serving it drizzles over these it adds a wonderful touch. 6oz Sugar Free Baking Chips (Pascha is...
  10. So my health is quite bad, the GI upset has leveled out after 4 weeks the bleeding stopped with vitamin K and calcium enriched almond milk daily to encourage clotting. My diet has been mostly meat, vegan cheese, collagen and almond milk drinks, and snacking on pork rinds. I recent introduced some almond yogurt to try and populate my gut bacteria and kale...
  11. So going over some classics I have not had in years and sticking with a keto/Plaleo diet I decided I missed fish sticks. Found a few recipes and modified them and gave myself options. For the pork rinds I suggest either BaconHeir Pork Panko and season to taste to choose your favorite seasoned ones and pulse in a food processor for panko. I personally...
  12. So each place has it's own secret sauce, this is the one I use for burgers and dips. You can use more mayo instead of yogurt for a better spread for burgers. 1/2 cup (120g) Mayo (I use Primal Kitchen) 1/2 cup (120g) Almond Yogurt Kite Hill Plain Unsweetened 16 Dill hamburger Pickle Chips (56g) 2tbsp Dill Pickle Juice 2tbsp Unsweetened Ketchup...
  13. Beyond Beef ground would be Gluten free fake beef. They also make a taco meat version so you could opt out of even having to season it, just brown and use.
  14. Good question, with my last issue...I just called my GI and went around my normal doctor. I can say the down side to this is the GI docs take a lot more time for appointments and doing anything I think you would have had to have a referral at least once to said GI doc to straight up contact them like I did. If you can get copies of those test results...
  15. Sounds like something to treat SIBO (Small Intestine Bacterial Overgrowth) or Candida. There are test for those you can have done to confirm before taking anything. The oils and the garlic pills are commonly used in conjunction with a no sugar low carb diet to kill off the over growth. In the case of having a bad strain of bacteria this would show up in...
  16. I used to do deli meat roll ups, take the deli meat stuff with sauce and cheese, melt just a bit in the oven...like cheese sticks lol. Also used to do cream cheese stuff ham rolls. For me today I made crockpot chicken, I used couple of handfulls of baby carrots, and 3 stalks of celary chopped in the bottom of the insta pot, put put in 1 tsp thyme ...
  17. This recipe even has a great way to get the skin off, I find this recipe to be really diet friendly, no added salt, no onion, garlic, or pepper. 1lb Salmon Center Cut 1 Lemon Sliced up 1 tbsp oil of choice (I used avocado but gee, or olive would be nice) 2 tbsp cooking white wine Dried or fresh dil for garnish 1. Preheat oven to 475F ...
  18. I am going through a bad bought myself and my stomach is only putting up with fish, lean soft cooked meats, eggs, turkey, and I am fine with nut milks or nut butters but not my normal nut based baked goods. >.< I also can not stomach veggies or spices right now. Find what you body wants and eat that for now, just try to balance the nutrients if...

Woke up this morning feeling like death....constant D all morning, random urge to vomit before even eating, so tired I could not even do yoga so I just spent 2 hours on the mat this morning lifting a dumbell unable to even sit up Late on felt better double checked my temp no fever, but my allergies are acting up guess the wind blew something in. So...
  20. This is modified from a recipe I found so it would taste just like those my grandmother used to keep in the metal tin on the kitchen counter. 21. These are bit more crumbly sugar cookie knock off, the coconut flour makes them super inexpensive to make and it makes a large amount. Will post a higher grade one that is more for decorating with icing later. 84g (3/4 Cup) Coconut Flour 133g (2/3 Cup) Swerve Granular 2 tsp Cream of tartar 1 tsp baking soda 4 Eggs Whisked Room Temp 80-120ml...

  23. So I got to see my GI doc...3 weeks of being in pain, D and bleeding issues. I had a nice detailed report almost 2 pages in a word document summarizing each weeks pain, diet, supplements, my state, BM details, and conclusions. He read through the thing and asked to scan it into the records, then after a basic examination he ordered a CT scan and full blood...
  24. I did one a few years ago using a FatHead dough base and did it in a pie pan. I used vegan cheese and it turned out decent.....expensive as all balls so more of a once or twice a year treat I think the real cheese version is much cheaper A similar method can be used to make gooy cinnamon rolls the melted cheese made the dough gooy stretchy like gluten dough...
  25. This recipe is really heavy, the bread is a strong herbed flavored bread that is meant to be slathered slathered and butter and eaten like garlic bread with soups/pasta or have cheese melted over it. Seasonings to be used are Little Italy Blend from "the Spice House" or Churri Churri Seasoning from Spicly Organics. Makes a 2lb loaf in a large bread...
