Yep I already called my local HEB to ask about having them stock the Polish Kielbasa, Ennis where I live is a Czech town. >.< yet none of the kielbasa in this town is safe for me to even use for flavoring. I am so looking forward to making a nice broth out of it, going to then use it for seasoning stir fries, making sauces, and just for soups. -

Well this just explained a metric ton of my issues....wax veggies make me puke, condiments with cellulose gel in them make me puke, certain medications make me puke, certain powder mixes do, etc. I never made that connection but yes I do get a itchy rash when they put ECG electrodes on me. I am always snacking on nuts, seeds, almond butter, and protein shakes, full fat, and high fiber foods help you stay full longer. I use vegan protein powders like NutraKey V-pro , MRM veggie elite , etc so no issues and dairy free. PS if you ever get those crazy random cravings or need foods I complied a comprehensive list of gluten-free food alternatives... -

The delayed reaction could be many things, I would say it was your antibodies slowly ramping up then peaking out. Odd though with the delay did you get constipated? How regular are you? I can not digest most meats or animal fats, animal wise I only consume egg whites, and once or twice a month have fish or crab. Try adding a few tbsp of arrow root starch, it dries them out and adds a bit of crispy texture to them. Start small work your way up vegan and gluten free baking is tricky. Celiac is a autoimmune disease where the gluten proteins (smaller then germs) confuse your immune system into attacking your own body essentially. There will be a withdrawal of course stopping cold turkey from gluten but you have to if your going to heal. Even small crumbs, residue, or something touching then being removed will leave some of the gluten protein... -
You have only been off it for a week, and as mentioned unless your did a clean out and changed 100% over I doubt you removed all source of gluten. It can take 2 weeks for most symptoms to start to go away, reintroducing after 1 weeks you will probably not have that major of a backlash just yet. But some symptoms from a gluten exposure can take up to 6 months...

Funny thing is celiac is one backassward disease, you have to be on gluten for 12 weeks for it to show up in your blood testing, and 2 weeks for it to show up in the follow up test that involves a endoscope and biopsies. I never tried jimmey dean as they do not say gluten free, but I use another brand for cooking in my kitchen for others and I love using turkey sausage and bacon for making stocks and flavoring foods I eat (Meat digestion issues personally). I have been lactose intolerant for over 10 years also have a allergy to whey. Top it off with dairy other then casein really brings out my autism issues.....yeah.
